Snce discovering the absolutely wonderful egg yolk and butter waffle that Carnivore Angel recently posted I have a big surplus of egg whites. I am considering beating up the egg whites and first baking them then dehydrating them to make my own egg white powder. I will let you know if it works. The one other method I saw for making egg white powder said to use egg whites from hard boiled eggs and put them in oven at lowest temp for eight hours. I think whipped egg whites will work better. Not sure Re time though.
We just made these adding the shredded frozen butter and it turned out wonderful. This had a spongy bread texture. Amazing. Easy to make. Another excellent recipe.
I've noticed a difference in the buns and bread shrinking in silicone versus the mesh pans. I purchased a bread pan that has holes in it for making loaves. I line it with parchment paper and the loaves shrink a lot less. What I've noticed is the moisture from the condensation is what makes the bottom and sides shrink. I still have to give this version of your buns a try yet, but they look yummy! Hope you have a great trip!

I just want you to know I LOVE your version of the PSMF bread, adding the beef bone broth powder makes the taste and great texture, it's my go to recipe. Keep having fun!
So I ended up splitting my meringue into two layers and turning oven back in to low temp. Got distracted and forgot about it. It was turning to powder with a touch. I ended up putting in a large zip lock bag and using a rolling pin to turn it to powder. Came out to almost 2 cups (10 egg whites I think). I probably cooked more than needed.

Popped them in a cold oven then set it at 170 degree oven this morning then turned it off when it came to temp. Not sure if they dried out because of that, will have one at 1 or 2 pm today.

Anita does the Bone Broth that you use have fat in it because your batter gets stiff without any issues. Also thanks for the nifty tip on putting the cooking rack under the mesh pan. I will need to try that for sure!
No, the Now Bone Broth powder is fat free. I wonder if that is why some people cannot get their mixture whipped up to stiff. In that case I think if you have bone broth powder with fat the solution would be to mix it in at the end with the egg yolks. Thanks for asking this!
I have found that using all egg white powder in my bread and buns do not deflate like using liquid eggs. Egg white powder has gone crazy in price and hard to find though. Thanks for another good recipe! And I'm going to check out the new channel you referred to.
I think this is going to work really well. I baked at 325 for 20 minutes then turned oven off for a while. Still very meringue like so I turned oven on at about 225 for a while. In places where it was a bit thicker it is still slightly damp so left in oven. But turned it off. I didn’t track times exactly but definitely no more than 2 hours. I spread on parchment with a rack under. I think I had about ten egg whites from some large eggs as from our own chickens. I will let you know how much egg white powder that makes.
Hi Anita 🙂 I made a double recipe today. Cooked 2 silicone bun trays (qty 12) in the oven and there was enough batter left to cook 4 ice cream scoop plops in the air fryer. I liked the air fryer results more than the oven. Question...how do you store your buns? In the fridge or on the counter. I especially made your recipe because you mentioned that the tops don't get sticky. If putting them in the fridge makes the tops sticky, I won't be impressed. 🤦🏼♀️ Thanks for sharing your recipes. @@KetogenicWoman I had them in the fridge for one day and they got sticky. We put them in the air fryer on bake (300 degrees) for a few minutes to get rid of the stickiness. Next time, they'll stay on the counter in an airtight container. Thanks for the recipe. I like these better than the other protein buns that I've made. Keep up the great work. Doughtein Recipe Instructions The recipe for Doughtein is rather simple. 1 scoop protein powder - Most find an unflavored whey protein works great. For those who need to avoid dairy you can try a Vegan Plant Based Protein. 3/4 cup egg whites 1/2 tsp baking powder 1/2 tsp xanthan gum Beat egg whites, baking powder and xanthan gum to stiff peaks. Fold in protein powder with spatula For pancakes, fry in pan. For buns, divide into three mounds on parchment paper (add toppings ie everything bagel spice) bake at 350F for 20 min. Store unused in fridge.
I will try this out! Some people cannot get the EWP and it is very expensive here in Canada. But for those who cannot do whey or cannot do the plant based powders, the EWP is still an option but yes an expensive option.

About 10 days I have been doing a routine. shrugs biceps over head two fives arms to head slide up my back knee on chair take five to ground keep back straight. Smaller just do lift overhead straight up. Lots of arm things on Utube. It has driven my blood glucose down like a rock. Not difficult gets easier. Canada is cold stay inside to do it not that I don’t think light is important for you. In summer you could do a track around and at certain points do part of it . First bench set of 10. Pass again next set then third. Finally eat breakfast or last meal. I registered a 66G this AM at 5:00.
Please help!!! How do you easily remove the meringue flecks that get stuck in the mesh bun pan that remain after washing it. Some are not seen until pan is dried I have the same one that you are using.
Oh, I have not seen that! I wash mine in the dishwasher and that seems to clean it 100%. I might try the laundry too next time. Hopefully someone that reads your comment might have another idea.
If you just add more egg whites you will get merengue. The egg white powder acts as sort of like a flour and gives the buns or bread some structure and a bread like texture. Hope that helps!

What about the ingredients maybe? If there is any fat in your bone broth powder or any of the ingredients you have to whip up the egg whites first then add in the rest of the dry ingredients. Also if you are in a high humidity area, you might have to do that as well.
This is so subjective because I don't taste anything eggy about the bread at all! I kind of think it's to be a person to person thing. This bread is definitely softer and fluffier than the PSMF egg white breads out there.

I DO NOT store them in the fridge, I leave them on the counter for 3-4 days. I also like making buns in the airfryer!

If you just add more egg whites you will get merengue. The egg white powder acts as sort of like a flour and gives the buns or bread some structure and a bread like texture. Hope that helps!

I've never stored the BBBE buns or bread in the fridge! Maybe you are thinking about the PSMF bread?
I followed this step by step and mine did not get the volume that you did. 🤷♀️ they baked ok, but a little dense. Any idea what went wrong?
What about the ingredients maybe? If there is any fat in your bone broth powder or any of the ingredients you have to whip up the egg whites first then add in the rest of the dry ingredients. Also if you are in a high humidity area, you might have to do that as well.
Did you try this technique? Mine ended up dense as well. Possibly the bone broth having fats and the humidity as well

This is so subjective because I don't taste anything eggy about the bread at all! I kind of think it's to be a person to person thing. This bread is definitely softer and fluffier than the PSMF egg white breads out there.
