I think this song has acoustic guitar because it's supposed to be like Lucy Gray (the female character in the book/movie) singing it with her guitar. And she's singing about the mountains (where she came from) and how they can't catch her (in the hunger games Snow tells her to run). Olivia did do a great job with this more folksy sounding genre and it shows how popular she is now if they chose her to sing this for the movie

The creative team behind the music actually released a bts video a while back, going through the process of finding that appalachian folk sound, working with a bunch of musicians who play in that style, and creating the melody and overall sound for the songs that are written out lyrically in the novel. It's pretty likely that olivia either got given a brief of what kind of sound she should incorporate into her song so it would be relatively cohesive with the rest of the movie soundtrack, or that she maybe even worked with some musicians more experienced in this appalachian style. It's cool that you picked up on that! It makes me excited to see how the rest of the songs in the movie sound in comparison
This song (the songwriting and sound structure and vocal choices so clearly made by Olivia) has me so excited for when/if she decides to pull a 'folklore' and dive into some fictional storyland so she can pair her gorgeous vocals (and harmonies!) with the brilliant, exaggerated, narrative style lyrical genius! I'm honestly like 82% more exicted for this movie than i was before this song came out. It paints such an "intrigue and newness" to The Hunger Games.
