A walking foot helps a lot to keep all the layers moving together. You'll want to sew with the plastic line up instead of against the machine.
I made them! Very useful and make great gifts.

I added a sewn X on the printed side so the fabric doesn't slip so much when I use it to take a jar lid off! This works great.
I was wondering if it should be sewn down in the middle for that very reason.
This is one of the most practical ideas I've scrolled through looking at "quick sewing projects with scraps". I think I'll use this idea, but use double fold bias tape around the edge instead of doing a narrow seam and having to turn right side out and then topstitch (I'm lazy!). I could make a couple of these for all my family/friends. Inexpensive, quick and actually useful! For pot holders, I'm also going to use the same idea, except use terry cloth on one side instead of shelf liner (and double fold tape to finish the edge)
Is there a reason for two fabric pieces vs one?
So you don't see the seam allowance through the shelf liner when it's turn right-side out.
It helps when sewing the sandwich of layers together, so fabric is touching the footer, and the sewing machine foot plate.
If only 2 layers, then the grippy stuff will either be sticking to the sewing machine footplate or the presser foot.
