    Hello! I’m not sure if it’s because of the oil but after steaming, i can’t mix everything to together, is there anything I can do?

      There will be some oil on the top, I fold the dough and knead with spatula until it is mixed up again.

      You may try replacing it with 7g glutinous rice flour + 8 g rice flour.

      I used blended rice flour (either Teratai or Erawan), glutinous rice flour (either 3 Kambing or Erawan), wheat starch is bought from bakery supplies shop without brand.

    My snowskin is too dry and harden after only 2 days in the freezer. Do you know how to solve that problem?

      Keep in container with cover and freeze it immediately when done for storage. Thaw in refrigerator before serving, it shouldn't harden. If you chill it overnight and freeze the next day, it will harden.

    I try making this. I make it on monday and when i take it out from the fridge it was hard. Not as soft as the 1st day i do it. Why ya?? Or is it normal like this?

      I did not put into air tight container. I put in a mooncake box and keep refrigerator. By day 3 when i take it out and try it was so hard.

      For storage, put snow skin mooncakes in container with lid and freeze, thaw in refrigerator before serving. I usually finish within 5-6 days. If you chill them, it will start to harden the 2nd day, and 3rd it will be very hard.

      I put in air-tight container and freeze it, transfer to refrigerator to thaw it before serving, I usually finish within 5-6 days.

      Haven't tried with cornstarch, you may try replacing wheat starch with half rice flour and half glutinous rice flour.

      Yes, try 7 g rice flour + 8 g glutinous for 15 g wheat starch.

      It will turn bad if left at room temperature until the next day. You need to freeze it for storage.

      Oh, the green colour is from Matcha (Japanese green tea powder) bought from bakery supplies shop, not dye.

      I never used artificial colouring for my mooncake, I always use natural colouring. For yellow, I use carrot juice, purple I use purple sweet potato soup, green is pandan or matcha.

      Freeze the snow skin mooncakes in airtight container, thaw in refrigerator a day ahead before serving and finish the same day after thawing. I usually finish within 5-6 days. If you chill it overnight, it will harden the next day.

      I have similar problem too, the pastry smells weird (flour-oily odour although cooked coating flour being used. Do you think I should replace fresh normal milk with diet fresh milk? Thanks.

      Are you using this recipe or other recipe? I'm not sure what the weird smell you mean, may be it is the Matcha flavor or milk flavor or the flavor of combination of Matcha milk. If you are not a fan of Matcha, you might not like the Matcha flavor.
