等不及中秋了,一起做榴莲冰皮月饼。做法直接,是个免烤箱食谱。食谱分量要拿捏得准,可以作出外皮口感软糯又不粘牙的冰皮月饼。今天用牛奶和抹茶粉制作成两色,白原味和绿抹茶冰皮。揉面到位,冰皮印压纹路清晰,撕开还有拉丝效果。内馅也采用了满满新鲜榴莲果肉搭配椰奶油,口感拉丝且香醇,冰皮也软糯奶香甜。好吃~榴莲控必试。
冰皮月饼像其名一样是个冰皮,所以没有烤过,全程用蒸淀粉的方式制作。作好建议放冰库冷冻最好保持原来软糯度。糯米粉帮助口感软糯;粘米粉帮助顺滑不粘牙;澄粉帮助晶莹通透, 所以一个不可少。
收藏方式:做好收密封容器,放冰库冷冻2小时后立刻吃口感最佳。要保存更久,收冰库冷冻,吃前解冻保持柔糯度。
Can’t wait till Mid-Autumn Festival. Let’s make Durian Snowy Mooncakes. The method is straightforward, no bake recipe. With accurate ratio recipe, you can make snowy mooncakes with soft, glutinous yet non-sticky texture. Today, used milk and matcha powder to make two toned, white original and green matcha snowskin. When snowskin is kneaded just right, clear stamp imprinted pattern, even with stringpull effect when pull apart. The filling is loaded with durian pulp and coconut cream, delicate stringpull texture with fragrance, snowskin also soft glutinous with sweet milky aroma. Yummy~Durian Fans must try.
Snowy Mooncake has snow skin as its name suggests, so it’s not baked, made by steaming starch throughout the process. Thus, recommended to store in freezer to keep the original softness and glutinous. Glutinous rice flour gives soft glutinous texture; rice flour gives smoothness and non-stickiness; Wheat Starch gives crystal translucent appearance, so none is dispensable.
Storage method: Put in airtight container, freeze for 2 hours, and serve immediately for the best taste. To keep it longer, freeze in the freezer and thaw before eating to keep original softness and glutinous.
♦Ingredients 食材=10pcs Snowy Mooncake 冰皮月饼=(50g Mooncake Mould 月饼模具)
=Snow Skin 冰皮 (10pcs, 30g/pc)=
40g Glutinous Rice Flour 糯米粉
40g Rice Flour 粘米粉
24g Wheat Starch 澄粉
24g Icing Sugar 糖粉
1g Salt 盐
148g Milk 牛奶
21g Condensed Milk 炼奶
24g Corn Oil 玉米油
1g Matcha Powder 抹茶粉 (for half of the snowskin 给一半冰皮)
(After water boiled, steam on medium-high heat for 15 minutes) (水沸腾后,中大火蒸15分钟)
=Durian Fillings 榴莲馅 (10pcs, 27g/pc)=
270g Durian Flesh 榴莲果肉
15g Coconut Cream (Thick) 椰奶油(浓)
10g Icing Sugar 糖粉
0.5g Salt 盐
(Durian Fillings wrapped and freeze for 2hours till use) (榴莲馅包好冷冻2小时待用)
(Once mooncakes are done, freeze in the freezer for 2 hours) (月饼作好,冰库冷冻2小时)
