Growing up in Chicago, cheese and apple is a very common being close to Wisconsin and all, I have not heard of it a pie. It sounds good to me.

As for apples and cheese, I've eaten that for years. Grilled apple and cheese sandwiches are great.

California is home and here Wensleydale cheese fine its way to my kitchen. I like it very much . That aged ricotta texture with the fruit combination are very yummy

what about a mix of Wensleydale and a tart apple, like a Granny Smith ? have a larger ratio to cheese to apple as to keep the flavour of the cheese more (edit: cheese is also added on American apple pies though it is usually cheddar )

I’m shocked that the cheese shop doesn’t provide toothpicks for their samples. The idea of anyone reaching in with their bare hands and taking a sample makes me shudder. Maybe USA has different health and safety standards?
