We don't get to buy sour cream where I live. So I made this with yoghurt; that too adding water to make it one cup. Then having no other oil other the cooking coconut oil, I used that instead of canola oil or sunflower oil. I baked this cake without fruits having no fruits with me. This cake is so soft and fluffy and also moist. Thank you, David, for this perfect cake recipe.

I tried this and made a little change that suits my health...where you have sugar...I replaced with monk fruit...where your have sour cream I replaced with organic coconut milk...Unbleachedflour...bottom layer blueberries and top layer strawberries...delicious! AGAIN THANKS FOR SHARING!

I've just made the strawberry cake! It was very easy to execute and the result is just wow!! Delicious. I only put 1/2 a cup of sugar instead and it was perfect 👌
I tried it with a half cup too, but I'd reccomend using the full cup if you're not watching your sugar intake. A half cup doesn't make the cake taste very sweet.

Dear Dave. What a wonderful recipe. I live in Tanzania and it’s very rare to find sour cream here. Locally grown Strawberries are very small and tart. And medium to large size come from South Africa. 3/4 cup of sour cream costs and arm and a leg because it comes from Denmark. This is my most expensive cake I have made but absolutely delicious. Can I substitute the sour cream for something else? Perhaps plain yogurt? Can’t wait to make the peanut butter and Nutella cookies.

I made it with apricots as they are in season, and brushed it with apricot jam while still hot, as a glaze. The addition of a little fresh cream made it even nicer to eat!
Great recipe thanks! I would like to share a tip with you for hulling strawberries. Take a straw and punch though the pointed end up to the hull. It will pop right out. I only suggest this because it is known that a small worm lives around the hull of strawberries.

I baked one and it was perfect except that my strawberries in the centre weren’t pieces and seemed liquidfied and the top pieces also did not look as nice as yours. I bought good quality strawberries and baked my cake for an hour. I wonder if I should cover it with foil after 30min and turn my oven down to 160 degrees C or 150*C ?

I made my own healthy not-guilty version!!
I made mine Gluten free, Dairy free and Sugar free and with dried cranberries, raisins and walnuts.

I put about 8 drops of lemon oil in mine to add a hint of lemon with the sweet strawberries. You could also do lemon zest!

Still using this recipe 2 years later. Have used blueberries & sweetened fresh blackberries too!

🤤🤤🤤 Considering the fact that I’ve made your Lemon Cookies and COMPLETELY ENJOYED THOSE, I know this cake is delicious too!!! Which is why I shouldn’t make this cake nor those cookies anytime soon, I’m on a roll with my workouts and it’ll be just me alone with the sweets - unless I take a drive to share some of it. Of course, that would mean I’d have to give some of it up... 😝🤣🤣
-2 eggs
-1 cup sugar
MIX
-1 cup sour cream
-1/2 cup oil
MIX
-2 cups flour
-2 tsp baking powder
-pinch of salt
Pour one layer into pan. Cover with strawberries. Pour second layer. Cover with strawberries.
Bake at 350 for 50 minutes or till toothpick comes out clean
I used Kroger brand sour cream and Kroger brand “pure vegetable oil”.
Thanks always helps to have it written out in notes. I like the vanilla extract and lemon zest options too.

Is there any way to advise how much stevia of trying to make sugar free? And if you don’t own a mixer can you throw it into a blender or just beat with a fork?

I baked one and it was perfect except that my strawberries in the centre weren’t pieces and seemed liquidfied and the top pieces also did not look as nice as yours. I bought good quality strawberries and baked my cake for an hour. I wonder if I should cover it with foil after 30min and turn my oven down to 160 degrees C or 150*C ?
