    Michael Landon, I loved him as Pa. It's so sad he passed away so young. As a kid I loved little house on the prairie. It's a shame the kids these days don't have shows like that. 😕

    I think adding the kale later is the perfect idea! I used to work at Olive Garden and we added the kale to the gallon bag of soup just as we took it up to where we portion from. The kale just wilted enough from the residual heat. *chefs kiss* perfect!

    One thing I love about canning soups and sauces is you can “fix” them once you open them with various thickeners, add spices and sugar if necessary and anything needed really. The soup looks fantastic and will sure taste good on a cold winter night!

      Right! after I try it for the first time I make a note on my canning stickers of what I added to get my desired outcome that way my old brain doesn't forget lol. I use removable stickers so adding a second label is not big deal.

    Delicious-looking! I wouldn't be concerned about 'too much liquid'. Remember, many Italian soups have a thin base. This recipe looks amazing. i cannot wait to give it a try. Buon appetito! And thank you again for posting such wonderful water bath canning videos.

    Hi Leilonie. I have a suggestion for your frustration with soup when putting in jars. I would separate the liquid from the solids. Divide the solids evenly among the jars you are using. Then, add the liquid to each jar to the head space required. My 2 cents. We enjoy your videos. Have a great Day !! 😊

    To get the perfect bacon, use parchment paper on a cookie sheet, lay out the bacon cook on 400 for roughly 12 minutes turn it over and cook another 4 minutes or you can skip the turning but I like my bacon totally crispy.

    My Daughters and I have watched LHOTP for decades!!!!! It's a Sunday staple!! My Daughters have since tried to find their "Charles or Almanzo"!! Love your Channel!!!! I've been following you for a while now! This is exactly how my Grandma preserved her garden harvests!! No FDA in the depression era!!!!!

      The FDA started in June of, I think, 1906 so yes, it has been around all that time looking out for the citizens of the United States and most of their knowledge is recommendations not laws.

    Best canned, better than Olive Garden!! Also, Tuscan Style is delicious too. Great choice!! You're going to LOVE this soup! My favorites so far, beef vegetable, Tuscan Style, Zuppa Toscana and Southwest turkey soup! Deeeelish! All WBed for 1 hour from leftovers. Been WBing for 50+yrs.

    The first year it aired we left for Australia for the Air Force. So I ordered the box set of books. My daughter was five years old. I read those books to her every night. I hope the two of you bond as well as we did.

    When you rinsed your potatoes until the water ran clear you washed off all that starch that would have thickened your soup broth. I'm sure it will taste wonderful, but the potato rinse is what I believe changed your consistency :)

      When I soak my potatoes in cold water i let it set to settle the starch ... Then I pour off water into the garden and dry the potato starch just in the bowl then save it in a jar ... free starch I can add to pies and soups it's amazing how much you build up over time !

    I use instant mash potatoes to thicken. No lumps. Instantly thickens

    Honey. That soup is never thick! You made it exactly correct… probably should have used all your broth… it would have been fine…& filled more jars! 😉❤️

    I think the starch from your potatoes would’ve thickened up your soup very well, but that’s what it’s all about we live and learn you can always take a nap after opening it looks fantastic. The beef cabbage soup looks amazing also.

      Rinsing the potatoes after cutting rinsed away a lot of the starch.

    If I need to thicken up a soup, I throw some potato flakes in. It gives such a potato flavor, it's inexpensive and and they blend right in.

    Hi! I'm Ruth and I hail from Bakersfield, Ca! Just a suggestion...when my soup is a little watery, and it has potatoes, I smash some of the potato pieces and continue cooking until it is thickened. Works every time!

      We also use mashed potatoes to extend a soup by putting a mashed helping in the bottom of the bowl followed by the ladle of soup or stew. We also keep a jar with potato flake. Just adding a table spoon or two can thicken it up (dried mushroom powder works also) 😊.

    Remember you are going to add Kale and they always add parmesan cheese at the restaurant. It looks great and thanks for sharing! This is my favorite soup from the OG!!! I can't wait to make some!

I made your beef and cabbage soup and here in Virginia it's starting to get cooler and I'm excited to open it up for a cool autumn day.     Don't stress about the liquid. I've made this soup in the crockpot for several years and mine is always like this. HOWEVER, I've wanted to cut back on the liquid too. Thank you for doing this video!

    I love zuppa tuscana ❤ and this is definitely going on my must try list!!! A kitchen safety tip: put a damp towel under your cutting board so its not sliding around on you, id hate to see you hurt yourself

    Aw, your daughter is so precious. Smart and beautiful. I grew up watching little house on the prairie.
    I also got crazy this summer with canning beans. I made a soup similar to this with sausage, white beans, potatoes, I used some canned greens in mine. I was too chicken to add the cream, but I’m going to start trying more water bathing and dairy. ❤❤

    I just had a slap the side of my head moment. My mother canned salmon once when I was young, and she didn't use a pressure cooker, so I know you can can meats and fish with water bath only. After watching this it just occurred to me that I just bought the Harvest Steam Canner, which also doubles as a hot water bath canner and triples as a stock pot (honestly, I could poach a whole turkey in it. It's gorgeous!), so as long as it is okay to top up with boiling water I could try this canning method. I will go back and watch all the previous vids about this canning method, and then decide on a project. Thank you from the mad scientist that seems to be lurking inside of me.

    Zuppa Toscana is a thin soup. Lots of flavor, but even at Olive Garden it is very thin...so yours looks perfect!

    Good morning, Thank you for being the wonderful, brave rebel you are, walking ahead of us and sharing the journey. For what its worth, in my Zuppa, I stir in some instant mashed potatoes to give the broth a little body. For flavors adds, I love Glory Foods seasoned kale greens in my Zuppa along with a packet of Good Seasoning Zesty Italian dressing mix. God Bless and He makes it work all for our good!🙏😊

    I have made this copy cat recipe. It’s my go to with crusty bread. I use Kale, lots of kale. My family begs for it. Never thought of canning it!

    Read the books! My first grade teacher read them to me. Still one of my favorites. I actually traveled to the places where the Ingalls lives and also to the place in Missouri where Laura and almonzo settled. The house he built is still there and you can tour it. Also the house their daughter built for her parents is still there.

    My grandmother's both canned in the backyard, over a wood fire in a wash tub. I'm not sure how many quarts/half gallon jars they held... a bunch. I don't know how they did it, but They made pectin for jelly from apple peals.

    My sister and I watched Little House when it originally aired on TV. It was my most favorite show at the time. I'm so happy you and your daughter are getting to enjoy it together.       I watched it too, but I originally got hooked on reading the books when I was 8 years old. Although I enjoyed the TV show, it didn't compare to the books, especially the longer the series went on as the Hollywood writers took more creative liberties with Laura Ingalls Wilder's life story.

    I am in the process of making this. I am adding more potatoes. Just a thought too. Rinsing your potatoes after cutting before you add them to the soup takes away a bit of the potato starch that would have thickened it some while cooking. My Mother in law used to use the water she cooked her potatoes in to thicken her gravy for her dinner. I think I may use a little arrowroot powder to thicken the broth just a bit before canning. This will be my first time water bathing anything for 3 hours. Thanks for sharing all of your canning adventures.

I’m excited to water bath can this for the shelf, I’ve made my own version for years…💞 I have a suggestion for the next time it doesn’t measure out even, when loading in your jars, pour it back in the stock pot, 🤭🤭🤭rewash your jars, and do it again… ask me how I know …🤷🏻‍♀️🤭🤣😂🥰 or, can the juice in a couple pint jars at the same time, and open it with a full jar…🥰

    Love this recipe, but never thought of canning it! Thanks! A little tip that I love to do when cooking bacon: line a baking sheet with foil, lay down the strips of bacon put it in the oven for 20 (for thick cut, less for thinner) minutes on 400. Bam! Perfectly straight bacon without the grease splatter and I can use my stove to cook something else while it just cooks itself in the oven. I’ll never go back!

      I will have to give that method of cooking bacon a try. Of course, that would be more of a cold weather method. I’m curious to see how it turns out.

    I usually sprinkle a tbsp or 2 of flour on my sausage after I cook it then stir together in order to thicken the soup.

    Awww.. little house on the prairie, that was many years ago, well before either of you were born, this is so sweet. You and your daughter are so beautiful, it's a real treat to see. I like my bacon somewhere in between chewy and crisp.. I'm a little picky about that.

    It's supposed to be thin, it isn't a thick soup. It is one of my favorites! BTW I love my bacon crispy! Thank you for the video and recipe.😊

    That beef cabbage soup looks yummy. Gonna have to try that. Also the Zappa toscana looks good but my fav from Olive Garden has always been chicken knocchi soup. I’m wandering if that could be replicated. Thank you for sharing these recipes. Love your channel and transparency. Have a blessed day
    I now cook my bacon dr berry way. Lol. Cut the whole package in 3 or 4. Cooked in a saucepan with lid. Every once in a while store. Turns out crispy little bite size pieces. The most easiest and hands off method with the yummiest results. The high sides of the saucepan keep the frying splatter to a minimal

    Did you know Michael Landon was from Haddonfield NJ. That was his hometown, he was on the local High School football team. He mother and father lived their and many times he came home to visit. I am 69 and I was from that local area. I now live in central pa and I do follow the Amish cooking and canning out here.

    Oh my, oh my! Your daughter is just precious. She’s as cute as a button & smart as a whip. (Can you tell I’m an old soul with my analogies?☺️) Anyway, that Cabbage 🥬 Soup🥣 looks delicious and perfect for cooler days of the Autumn temp transition. I’m so thrilled you’re doing what my mother -in-law did. She Water Bathed all her wonderful recipes.
    Now I know I have a bundle of her handwritten recipes up in the attic. We moved so often, they’re in ☝️ of the many boxes up there.
    When I found this channel, it encouraged me to get canning again. The summer was wicked hot 🥵 so it was lots of salads & sandwiches. But now it suddenly cooled down here so this is just PERFECT! Thanks 🙏🏼

    Looks yummy, i love Zuppa Toscana. I like my bacon limp. You can add some of your canned potatoes when you make your soup. I know that is a bit disappointing when you work hard on a meal.

    its a very thin soup as it is. also, Id probably just sub the cream and extra water with milk. since its just being thinned out so much as it is. maybw add extra potatoes and hand mash w a potato masher to help thicken and makw it heartier without added thickners. still looks nice ❤

    If you cut each bacon slice in half, it fits in the pan easier….and using a bacon press helps so much to keep it flat.

      I'm going to add the kale and can it with the kale as kale can be hard to find in the winter where I live.

    please get the meat chopper! I love mine! It looks like a plus sign on a stick. heck even dollar tree sells them now! mine is fancy from pampered chef. Makes grinding up meat in a pan so easy!

    Concerning the leftover broth/liquid… I would add some potatoes and make a yummy potato soup for dinner with a pan of cornbread.

    I have only made the knock off Zuppa Toscana a couple times and never canned it-yet, but I add extra potatoes so it isn't as soupy. I'm sure it is delicious. Of course you can thicken when heating for your meal. I haven't done the 3 he water bath method yet , but will when I do this soup. Thanks.

    Just in case you didn't know, you can cook bacon in the oven! I didn't know that until a few years ago and is why I mention it to you. It's fantastic! I am a wimp when it comes to splattering bacon fat! Lol I won't cook it if I have to tend to it on the stove top! Have been cooking bacon in the oven ever since! Lay bacon out on tin foil lined baking sheet, I prefer using parchment paper instead. Place full sheet in the oven & turn oven on to 400F. DO NOT PRE HEAT OVEN!! I was told doing so will make a huge mess. I cook for 25-30min then flip bacon over and continue cooking until desired consistency, for me, that is VERY crispy! Lol As soon as I get bacon, I always have it pre cooked about 75% of the way & put it in between wax paper and seal it in ziplock until needed. If I just need a piece or 2 for a recipe it is already to go. Makes cooking so much easier having it ready to go when you need it! Besides, while it's in the oven for 30 minutes, I go do something else, you can't do that if you're cooking it on the stove. It does make a bit of a mess in the oven, however, it also makes a mess on your stove & countertops. Pressing the self clean button a bit more often is easier than washing down the stove, counters & often the floor once you're done cooking the bacon. I only use ONE rack in the oven & put tin foil on each side of my cookie/baking sheet to catch most of the splatter. I re use the tin foil the next time I cook bacon. It helps keep the oven a bit cleaner when cooking bacon. Thanks for the recipe & tutorial! I can't wait til I have time to make some!😋 Looks delicious!

    You can always add some instant mashed potatoes as a thickener but I agree that was alot of liquid. Maybe leave out the water all together? Love your videos!

    You could scissor cut your bacon before you fry it... its separates perfectly in the pan when frying and way less messy! :)

    Next time try adding some extra potatoes and mash the extra ones. That will thicken it without changing the flavor at all 😊. You can also add some dried potatoes if you’re eating it right away. I just don’t know about canning cooked dried potatoes. I only use dried potatoes as a thinker. Otherwise, I don’t eat them. I hope this helps. 😊

    I made the mushroom soup. Lots of it. Like 7 or 8 pints and 11 half pints. Happy to get that done. Plus just hamburger. And stewed tomatoes. . My next project will be. Cornish hens with potatoes onions in chicken broth. On quart jars ... Ok so this soup you made is on another video???

    I will be canning this soon. Zuppa Toscana is one of my favs and I get it each time I go to Olive garden. Not only can I have it anytime I want it, it's economical.

    Save it and then you can thicken it up when you open your jar of soup with corn starch or potato starch
