Made a mix like this over Thanksgiving this year! Potatoes, parsnips, carrots & brussel sprouts, in a garlicky herbed butter & olive oil mix. Sauteed it all & tossed in a splash of Worcestershire & Soy sauce at the end! Superb! Makes for a filling & delicious side dish that doesn't well, fill out! Third time I made this (third, not first), when preparing the squash, the skin of my hands ended up feeling "tight" and it had a mottled look, as if it was covered in fine cracks. Turns out there is a not-too-common allergy to the squash flesh. It cleared up pretty quick -- like, a day -- with the help of some over-the-counter hydrocortisone cream, and it wasn't painful (just "tight"). But it was weird the first time it happened. I kept washing my hands because I thought there was something _on_ my skin. There wasn't; it was my skin itself. I now use latex gloves when prepping the veg. To this day, I still don't know why it did _not_ happen the first two times I prepped a squash. Needless to say, I don't let the allergy stop me because this veggie dish is delicious!

The filling cooled out of the tin in the very beginning of baking process (2 minutes). Do you think it’s my tin’s problem or this has happened to you also? I’ll put some aluminum foil around the tin to continue baking...
TorgieBride85 I dunno, you can hear her tear foil right after she tosses the veggies with the olive oil, salt & pepper. 🤔 I lay down a sheet of Parchment paper on my baking sheet, toss the veggies in a bowl with seasoning and olive oil and then bake.
