      @@aimenmalik9440 You can, the texture might be a bit different. I use vanilla powder and it tastes ok, and still scoopable and soft. She also has a recipe for home-made extracts where she says you use glycerin instead of alcohol but the quality differs a bit

    Great recipe. Very easy. Another tip put your metal bowl in the freezer. I put my beaters in there, too. Cold helps the cream whip up. I use a hand mixer (electric) with metal bowl.

    Hi, I understand that you say there is no substitute for the condensed milk, but I would like to try and make it with honey, since I don't eat sugar. Do you think it will still work? I just don't want to waste all the ingredients trying.

    Love bigger bolder baking. Best channel EVER. I make your pizza dough recipe every week🤣 its always in my fridge as my family love pizza. I know how to make it without even looking at the recipe anymore! Can I also request a few recipes for future? 1. Levain bakery style cookie and 2. Fluffly thick pizza dough recipe. This current recipe I use of yours is like an italian style but would also love a thick fluffy style pizza and i only trust ur recipes for these things❤

    I've done no churn before, but always whipped the cream to stiff peaks and then folded in the condensed milk. Trying this method now, appreciate the tip - one bowl rather than two already makes it a winner. ;)

    Question. I have fresh cream from a dairy and its extremely thick, basically set. Can i still make this icecream or is it better to just use it for other things?

    Can we use vanilla essence instead of vanilla extract? Will it work the same way and prevent the ice-cream from becoming too hard?

      Yes, that should be fine but remember that vanilla extract is a much better quality ingredient from real vanilla where essence is not.

    Hi Gemma (it’s me the guy who used to comment a lot) I was wondering .... can I use the cream that floats up to the top on boiled milk straight from a pure Indian cow ... it takes a few days to collect enough for ice cream (we normally collect it and my mom and grannie do something to it and turn it into butter ..... we get 1 pound of butter with the cream collected in a week or two depending on the amount of milk the cow gives and where it is used ... such as in drinking or making cream cheese,etc. ) I am asking you this coz we here in India get low fat (20%)cream where I live

      You can use Amul whipping cream the pink pack not blue. I doubt about the cream once boiled since it has oily texture, making ghee is different though

    Hey Gemma!! I am allergic to Vanilla. Would the outcome of the ice cream be the same or can it be excluded?

      Oh I am so sorry about that. The vanilla, given that it is alcohol, helps prevent freezing, not just adds flavor. The alcohol in the extract will lower the freezing point making your ice-cream a little softer and easier to scoop. (Think about a bottle of vodka in the freezer?! It doesn’t freeze!). You can try other extracts if you enjoy a particular flavor. Let's say almond would be a nice addition in certain flavors. But if not then you can remove it altogether. Gemma 😊

      Great question! I use an unsweetened cocoa powder here, and you can add this to my ice cream base readily. I tend to use melted chocolate for chocolate ice cream (www.biggerbolderbaking.com/homemade-chocolate-ice-cream/) as here. Adding 4 teaspoons of sieved cocoa will give a good result too. Try it!

      Unfortunately, no. You need a high fat cream so it whips up well.

    Would you believe cream in my country doesn't always list the fat %? I often have to calculate it myself based on the amount of fat shown in the nutritional information and the total volume marked on the carton.

      What you do is make sure the eggs aren't super hot, then slowly add the eggs in stirring constantly. Hope this helps!

    Can we use cream skimmed over milk(In India it is called Malayi, firstly milk is boiled, then let it cool, then a yellowish layer of fat forms on surface, then skimm it off from the milk) instead of heavy cream?
    Also can we use milk + butter as heavy cream?

      Hi Tania! Cream is the fat skimmed off the milk. You will need all the fat in the cream. The way you describe it, the yellow layer of fat is skimmed off. You will need this fat in the ice cream. If you can find a way to retain all that, skimming off the cream from the milk, that should be grand. Milk + butter is not the same as using heavy cream as milk still has a lot of water in it. Fat is the key in making ice cream. Hope this answers your question.

    Gemma one question..in my country Heavy whipping cream is not easily available and is really expensive and cream with 30% fat doesn't whip correctly so the only thing we can use Non dairy ice cream :( .. can u please tell the recipe with non dairy cream?

    I made delicious flavors and every time I made Different
    KitKat . Oreo . twix . Chocolate chips . M&Ms . Chocolate syrup

    is it okay to skip the vanilla extract? I don't drink alcohol for religious reason

      You will miss out on the vanilla flavor and the alcohol does help the ice cream stay creamy. You can try to make your own extract by using vegetable glycerine instead of vodka. Give this recipe a go www.biggerbolderbaking.com/homemade-extracts/

    Hi dear,
    I have been making ice cream following your recipe for quite some time now.
    However, when I make fresh fruit icecream be it any fruit, the fruit pieces are frozen stiff in the lovely scoopable😍 icecream. It is not like the store brought fresh fruit icecream where the fruits remain nice and succulent not stiff as a popsicle . 😆😂🤣
    There must be a way to achieve this result at home.

      Yes, just puree the fruit and it will freeze better.

      @@biggerbolderbaking thank you for writing. I already do that; however like in tender coconut icecream, strawberry icecream or mango icecream for that matter one finds chuck of the fruit too, which are not frozen solid within the base.

      No, unfortunately that will not work. You need a high fat cream that whips up well.

    Gemma, To double any cake recipe we can simply make another batch but in case we have to half the recipe?? Do we need to half all the ingredients??

      If you need a double recipe, you can double all the ingredients. It works the same way when you need half the recipe. Just half all the ingredients and you'll be grand
