How to Make Roast Beef and a French Dip

  • I love sandwiches and one of my favorite sandwiches is the French dip sandwich. It's bursting with flavor and is incredibly delicious.

    Ingredients:
    5lb Top Sirloin Roast
    2 Tablespoons Kosher Salt
    1 Tablespoon Ground Black Pepper
    1 teaspoon garlic powder
    1 teaspoon Onion Powder
    1 teaspoon Dried Oregano
    1 teaspoon Dried Basil
    1/2 teaspoon crushed Red Pepper
    4 Beef Bouillon cubes
    6 cups Water
    Bolillo Rolls or French Rolls
    Instructions:
    Pre Heat your oven or smoker to 325 degrees
    Trim fat from outer surface of top sirloin roast.
    Combine salt, pepper, garlic, onion, herbs, and crushed pepper in a small bowl.
    Apply a good coat of the seasoning to the surface. Reserve the remaining seasoning.
    Add 6 cups of water to a 9x13 baking pan. Add the beef bullion cubes and add 1/2 table spoon of remaining rub.
    Place a wire baking rack over the pan and sit the top sirloin roast on the rack. Insert a wired probe thermometer and smoke until the internal temperature reaches 125-135 depending on how you rare you like your roast beef. Around a 2 hour cook time.
    Remove the roast from the oven/smoker, pour the beef juice into a large container and place the roast in the baking pan. Loosely cover the roast with aluminum foil and refrigerate overnight to completely cool. Place the container with the beef juice in the refrigerator as well.
    Slice the Roast as thin as possible with a knife or use a meat slicer.
    French Dip Assembly
    Split French Roll in half lengthwise (don’t cut all the way through the bread)
    Place several slices of the beef in the simmering beef juice for 1 minute
    Hollow out both sides of the bread to make room for the meat.
    Add a layer of cream horse radish sauce
    Add 2 slices of provolone cheese
    Add the meet to the bread
    If you like it extra sloppy, pour a little more juice on top of the meat or if you are feeling crazy loco, dunk the entire sandwich in the juice.

    Wow! Thanks for the recipe...I normally use store bought steak seasoning for my roast beef. I'd love to try your homemade spices... It's gonna be yummy for sure.

    Ehhh, even if you don't like rare meat it's fine to cook this rare, that's because by heating it up in the jus after it's rested and been sliced thin it has so much extra surface area, it'll go from rare to well down in seconds but it doesn't ruin the texture or make it dry. So even if you do like rare meat, this doesn't hurt it.

    For me there are only 3 or 4 sandwiches that I really will make. French dip, Rubin, and Cubano. (Grilled cheese with ham and tomato is good too and a favorite for my kids). The first 3 are great for guests because you can slice em as small as needed for easy finger food. Maybe do a video on Cuban or Rubin? Making the pork or corned beef the day before is always fun! Thx!

    no on the rare beef, and as far as this entire procedure, just go buy some boars head roast beef, its gonna be good and you don't need a big huge slicer on your counter to make a sandwich...you can also just cook a trip in the oven for a couple hrs with some liquid, celery, onion carrots etc, beef broth, not too much liquid but an inch or 2 and cook the roast for a couple hrs, get some good baquette or french rolls or bread, and when the meat is almost falling apart after 2 hrs or so slice it let it sit in the broth from cooking your roast and you have your au jus and cooked meat, its not that difficult to make french dip's cook a roast in the oven, you don't need smokers or meat thermometers and some outdoor bbq setup, none of that is necessary to make a killer french dip or beef dip sandwich.

    Looks good, love rare roast beef, but your thermometer needs replacing. There’s no way that was cooked to 135°. That was a solid 125°, especially that bottom middle section. The warmed jus cooks it the rest of the way though, no problem.

    Looks good my man. But I would have used a toasted Ciabatta bun with horse radish aswell as garlic aioli and of course jalepeno havarti cheese

    Closest i have seen to a Lions Choice Roast Beef Sandwich in St Louis , Missouri. except you have no special Seasoning Salt like they use.

    totally do able... except you have to buy the meat slicer... Impossible to get thin or shaved deli slices with a knife.
