    Limoncello Cake with Lemon Cream Cheese Frosting
    Ingredients:
    Cake:
    1 ½ cups all-purpose flour
    1 teaspoon baking powder
    ½ teaspoon baking soda
    ¼ teaspoon salt
    ½ cup unsalted butter, softened
    1 cup sugar
    2 large eggs
    ¼ cup limoncello liqueur
    1 tablespoon lemon zest
    1 teaspoon vanilla extract
    ½ cup buttermilk
    Lemon Cream Cheese Frosting:
    8 oz cream cheese, softened
    ½ cup unsalted butter, softened
    3 cups powdered sugar
    1 tablespoon limoncello liqueur
    1 tablespoon lemon juice
    1 teaspoon lemon zest
    Instructions:
    Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
    Make Cake Batter: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, mixing after each addition.
    Add Wet Ingredients: Mix in limoncello, lemon zest, and vanilla extract. Alternate adding dry ingredients and buttermilk, starting and ending with dry ingredients. Mix until just combined.
    Bake: Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let the cake cool completely before frosting.
    Make Frosting: In a large bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in limoncello, lemon juice, and lemon zest.
    Frost the Cake: Spread the frosting on the cooled cake. Decorate with extra lemon zest or edible flowers if desired.

    Can't wait to make the cake! Also, they make buttermilk powder, may be worth trying?

      So fake to me but it would solve my problems in a pinch 😂

    You can make buttermilk by mixing 1 cup of whole milk with 1 tbsp of lemon juice or white vinegar and leaving it to sit at room temperature for 10 minutes to thicken slightly.
