Lovely. Very similar to bread pudding, but quicker. And a quick custard too. I find all the ready made custards too sweet these days. Will definitely make my own from now on. And will be making a Wet Nelly very soon. I know a little boy who will love it too. (My grandson, Finley).
Rik you need to put salt in your custard,it makes a huge difference,most desserts need salt.Crème Anglaise, Ice Creams,some sorbets,cookies,cakes buttercream all improved with salt.I use to make my bread puddings for the restaurants I worked at similar to this,but I would dry out the bread first,mix my milk,and cream with eggs,sugar,and vanilla,add my fruits ,then my custard mix,and mix by hand so as to not break up the bread cubes.I would leave it fridge overnight,then potion individually,and bake in a water bath ,we served with Ice cream,as custard isn’t popular in the US.My mother made British style bread puddings and I think she put a little coffee powder,and cocoa powder in hers,it was wet,and stodgy,and I loved it.That sort of pudding wouldn’t go well in America,you know they don’t eat fruit cakes here.I think that’s because of too Much fruit,and stodgy. Banana,chocolate,chocolate chip bread puddings went well,and white chocolate,raspberry,almond ones,and caramel apple ones.

As I recall it was just white bread with the crust removed and cut up and placed in a bakeware tray with milk, sugar and vanilla if you wish. You then put your fingers into the mix and squeeze the mix through your fingers until it is totally mixed into a pudding with NO bread chunks, then stir in raisins. The bread soaks up the milk and sugar mix and thickens. You then refrigerate the pudding which thickens as it chills. Serve with cinnamon. I have not had it since I was a kid and I am 59 now. Someday I will have to give it a try and see if I can make it as good as I remember. PS NO BAKING!!
Oh Rik that looks so amazingly delicious,I have a recipe for bread pudding I’ve made for many years,got it from a friend that grew up in Canada but it cooks in a bag in boiling water for three hours and the cream sauce is almond,oh my it’s absolutely delicious. I’m not from Liverpool but the West Mid’s and this is how my mother taught me how to make bread pudding-minus the alcohol-and how her mother taught her before her and her mother before that and my Nan was born in 1918. I always make a wetter bread pudding as I don’t like it dry.

Just over the water from Liverpool, our family recipe doesn’t put all the evap in but does use cold tea from the pot and brown sugar, so it turns out not only wet but more of a brown colour.
As a Liverpudlian, some who is called a wet nelly is a whiney, moaning, negative type of person. A bit of a drip as the saying goes. Love every thing you cook.

Drop scones are basically a scone that is wet enough to spoon out for baking,you can’t roll them,or cut them as the mixture is too wet.I made them at a restaurant I worked at for brunch,as scooping with a ice cream scoop is much quicker than rolling ,and cutting.

When my kids were growing up I used to make any colour custard! As I remember they liked blue or green custard best! According to the kids they could taste the difference. Lol 😂

I can’t wait to see my hubbies face when I tell him I’m making him a wet Nelly for tea 😂thank you Rik it looks fabulous and I love the idea of using evaporated milk reminds me of my dad he used to have tinned fruit with evaporated milk and bread and butter to dip in made me feel ill but put together in a pudding different story , Amanda xx. Thank you. You know your Dad was one of many - bread and butter dipped in many things. Back in the day I grew up eating gravy with bread and butter. Dad would always have everything swimming in gravy. He came from a not so privileged background (to say the least) Best, Rik

I remember my mum buying and enjoying something like that but it had a pastry crust on the bottom and cut into squares. I would get a custard tart topped with nutmeg. ❤️❤️❤️ Scousers love cakes and custard. I wonder if Nellie has something to do with the name Helen (Nellie backwards) ?

Drop scones are basically a scone that is wet enough to spoon out for baking,you can’t roll them,or cut them as the mixture is too wet.I made them at a restaurant I worked at for brunch,as scooping with a ice cream scoop is much quicker than rolling ,and cutting.
