About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

When Pathmark was still in business they had king crabs at a reasonable price. Wife and I used to get some every other weekend. At these prices no way possible. We walk right by it when we see it.

We use snow Crab meat and also add cucumber for crunch. Definitely far superior to kanikama.

Kind of dissapointed in Hiro. Didnt even dispatch the crab before severing limbs off??? Imagine getting pulled apart while still alive. I love Hiro but this was an L. :/
Notice how Hiro lightly dips his roll into the soy sauce? This is so you don't mask the flavor of the main ingredient's such as the sweetness of the crab. Japanese people are complexed when Americans drown their sushi in soy sauce in Japan. Guess it would be much easier not to drown your sushi in soy sauce if we (American's) got better quality fish at our restaurants.

@@nutcrackernoonan3637 WRONG!! I used to live in Kodiak Alaska and we cooked thousands of crabs. You cut it apart like he did and give it to anyone that eats fresh cooked crabs would be able to taste the difference immediately

@@fishstix4209 Big difference between mammals and crustaceans though. A crab or lobster can lose a claw and be perfectly fine. A cow can't lose a limb and continue on like everything is normal.
