60g icing sugar
1 egg
Filling :
100g cream cheese
100g mascarpone cheese
30g parmesan cheese
40g unsalted butter
30g sugar
20g corn starch
100g milk

请问芝士是不是不可以煮到滚呢?我开中小火了,芝士也不会完全融化到像你的视频那样顺滑,所以就一直搅一直煮,煮到它滚了,也还有一块块的。煮着煮着,就变油水分离了。谢谢🙏🏻
你首先要將芝士用最小火一邊攪一邊煮溶,這個步驟需要少少耐性,加入粟粉後將佢煮到濃稠就可以,唔需要煮滾。
估計你火太大了,正常用小火邊煮邊搞係唔會滾
Hi I have a problem when I'm molding the dough its like chewy and doesn't get attached to the tart molder what should I do? Is it lack of butter?
What flour did You use? When you mix flour and egg into beaten butter, don’t mix too long, just until incorporated. add flour mix around 1 min, add egg and mix less than a min. However butter need to be beaten at least 10-15 mins before adding flour and egg. Flour has gluten, when you continually mix it, it will become chewy like bread dough.

如果用air fryer 要用多少度来烤?几分钟?
如果是焗撻皮用160度,焗大約十分鐘左右,如果是焗表面焦的部分,用200度焗5分鐘左右

是的,放涼都是流心,甚至放到雪櫃都會還有流心較果,但一定要注意千萬不要過分煮
如果不要流心芝士, 要内陷比较硬的, 是不是咬烤久一点呢?
這樣的話你要將粟粉的用量加多一點,在煮好後剩涼少許就唧入焗好的撻皮中,然後再雪到完全冷卻,之後就跟片中一樣,掃蛋入爐

Alison I forget to tell you turn the top heat on only better then both top and bottom heat. And try to put on highest rack in the oven.
