How to cook Smothered Cabbage and Cast Iron Skillet Cornbread from scratch

  • New Orleans native Charlie Andrews Demonstrates on how to make his delicious, smothered cabbage with smoked pig tails and cast-iron cornbread from scratch. This meal serves up to 4 people. This meal is a true soul food classic! We start by taking the cabbage. We cut and clean it. We add smoked pig tails, onion and my favorite New Orleans seasonings into a pot of water. We let that simmer until it becomes a flavorful pork stock. We add the cabbage to that pork stock, and we let it cook down until the cabbage becomes soft and translucent! For our cornbread We add yellow cornmeal, flour, baking powder, baking soda, sugar, salt, whole milk, eggs, and salted butter into a large bowl and mix all the ingredients together. Next, we add it into a cast iron skillet and bake it until it becomes a nice golden-brown color! Hope you all will give this soul food classic a try!

    Looks delightful! What you call the stem, I call the heart. That’s my absolute favorite part of the cabbage. The cabbage flavor is at least double. So good!

    I used to gag just hearing my mama say pig tails! I've never seen them until your video. I just might make them, they look good and meaty. My husband loves the smothered chicken recipe of yours. I've made it twice already and the 7up pound cake. Thanks for great recipes, Charlie!

    Omg I'm such a foodie I loved watching you taste your food lol lol. That is how I felt about my greens today. I cooked my greens with salt pork and smoked hamhocks. Now I only cook my greens this way 3 times a year the rest of the time I use smoked turkey tails. I got some hog maws cooking on the stove right now.     Charlie, what if I don't have a cast iron skillet can I make my cornbread in a baking dish?🙋 I'm not ever using Jiffy cornbread mix anymore after seeing how you make it from scratch. Other TV Cooks usually recommend using Jiffy cornbread, but I've never heard you recommend any kind of box cornbread mix. I'm going to get up now and put on my smoked turkey wings for your cabbage recipe cabbage. Thanks Charlie🙋💞 how you cook.

      You may have to use a pie pan or round cake pan. Work with whatever you have. You may have to turn the temperature down to 350. Let me know how it turns out. You're welcome not a problem!

    Oh dear, my Mom would have loved this one! She grew up in the depression and near the end of her life she was wishing she had boiled cabbage. It didn't sound appealing to any of us so we just brushed off. Shame on us.. such a simple thing would have brought her great comfort and pleasure. Thank you Charlie. You make it look like heaven.     Cabbage looks great! I'm in charge of making the braised cabbage for my in-laws New Year's Day party in Uptown, I usually just sauté onions in bacon grease but I may have to add pig tails next time. . Have you tried adding a beer to your cabbage?

    I had one Grandmother who was Cajun and the one who raised me was from North Louisiana and cooked Southern style. I have learned to love my New Orleans Soul Foods and Creole foods - I mix that in with my sea food loving family out of Biloxi and I just altogether ADMIRE your STYLE! VERY VERY NEW ORLEANS "And there you have it"! I wish I did not watch this at 10:00 at night bec now I want this! LOL!

    WOW😱 I haven’t seen this cabbage and cornbread recipe since I was a
    little girl. My mom made it just like
    your recipe Charlie.
    I told my husband we have to go to
    Eastern Market which is in Detroit Michigan I live in Mount Clemens.
    I will be making this recipe also.
    I do cook cabbage and cornbread but I cook with smoke neck bones or smoke ham hocks. I have never made it with
    smoked pigtails.
    The pigtails and cabbage and rice took
    me right back too my childhood sitting
    in the kitchen at 1002 East 41st Place

    Looks great, Charlie. Cabbage is one of my all time favorite meals. I like pig tails but I prefer pickled tips. Wanted to bring some back with me from NOLA but it didn't work out. Maybe next time. One day I'll make homemade cornbread and stop using Jiffy.😊

    Okay, now I've watched so many ways of making Jasmine rice. And I think this is the 1st time I've ever seen this method. I do struggle with long grain rice & I've never had Jasmine before, but I will be trying this soon. So all I have to do is boil for 7-10 minutes & drain, the rinse & it's done? Damn, I guess I've been doing it wrong all this time.

      This method of cooking rice is my way. It's not according to the instructions. It works for me and it is in my opinion the best method for cooking long grain rice. Some people tell me that's not how rice is supposed to be cooked. You're right because it's my way of doing it. lol Give it a try and let me know how it turns out. Thanks!

    I'm making this meal today. I literally have my pigtails on the stove as I am typing this comment. Only thing different I'm doing is using Jiffy boxed cornbread 😖😖😖 forgive me for that. But I am following all other instructions you are giving us in this video 😀

    Charlie can i sub for pork necks i cant find pig tails where i live right now? I am going to make this today but i got pork neck. Should i have just got smoked hamhock?

I didn't buy the smoked pork necks so I'm going to have to try those next time if I still can't find the pig tails.i added a few slices of smoked bacon for the smokey flavor and I am browning my pork necks. Either way I'm sure this is still going to be amazing thank you so much!!

    Hey Charlie, Today I cooked a New Year Day meal for about 80 people. (Black Eyed Peas, Collard Greens and Corn Bread).
    Even though I have been making corn bread since the beginning of time I tried your buttermilk corn bread recipe. I made it in full size sheet pans because of how much I was making. Everybody RAVED about it. It's a great recipe. THANK YOU. As you know, I have spent many years traveling the world while cooking. If you ever have questions about a certain cuisine, I would be happy to solve it.

Currently I'm in Western Canada and not sure of easy it's gonna be to get hold of smoked pig tails although a good bet would be a Caribbean grocery. Failing that a big, meaty ham hock shouldn't be out of place. Either way I'll return with a rundown of my attempt. I'm hungry again already...and I've just had lunch!

    Hey Charlie, if I’m using pickled meat instead of smoked pig tails do I use the same method of cooking cabbage

      Ashley Jones Boil the pickle meat for 1 hour. Drain water and add fresh water and pickle meat. Let boil for 30 minutes. Add cabbage and seasonings. Boil until cabbage is tender and transulcent.

    smiling... You did it again. I like to see you enjoying your own meals. It's Sunday morning @ 5:45 am. I thought about what I was going to cook today, of course after church. LOL I got the cabbage down pat.. that's the way i already cook mind. I don't have a cast iron skillet yet , what else can I use to make my cornbread come out like yours. LOL THANKS for the receipes.     Believe me Charlie but I'm cooking this meal with my cell phone in my apron pocket so I can go along with everything I already did my my smoked turkey now I'm getting down to the cabbage and cornbread thank you very much you are my😀🙋👍🥛 like I told you before I have health problems Charlie and I have to go so I can remember all the ingredients in what goes first would go second and so forth apron pocket cook I know you said you use jasmine rice I use it to I like it but I found another one that's just a little bit better to me and that's that cuz it separates real good and it doesn't stick and that's that buy some Indian rice and I even time if you like and see if you like it but I do I like to buy some back the b a s i m e n t i rice. And hardly no starch at all. They probably do have it there in Louisiana.

      Now I'm waiting Charlie on my cornbread that's the last thing I put in and I haven't added my cabbage yet but that's really the next thing I'm just waiting for my turkey wings to get teder enough. My rice is ready and I use the Indian basmati rice Monty rice and it came out really really nice all The grain's came out nice and separate.

      Charlie my rice in my cabbage came out Dandy it came out real good but I kind of messed up on my cornbread it didn't come out as soft as yours some reason I think I must have got tired when I was making the cornbread but it was good it's still better than the better than having box cornbread like I said I have health problems and sometimes I have to stop in between cooking and rest and then go back to it. That's what I'll do next time I'm going to make my cornbread first, to make sure I'm going by my recipe the right way not putting in too little or too much of something I think that's what I did. It was good anyway Charlie and thanks for the recipe😀🌹🙋
