I made thos for my dad lastnight for dinner..He grew up in Hazard Kentucky in the 1950s and grew up very poor..cabbage and greens and cornbread was what he ate about every night..Even with the different seasonings you use he still said it was a taste of going back home for him..Thank you so much for sharing this Mr Charlie..

Man, man, man, this looks so delicious. 😋 I've only had the greens/cabbage combo once many years ago at a friend's mother's house in Michoud and I really enjoyed it. Boy do I regret not bringing pickled meat back with me. 😢 I don't eat much pork anymore but I was gonna treat myself to some bcz I've been having a taste for it but my car was too packed with Christmas gifts for the grandkids to bring an ice chess. Ooooh yes! I just sat down to eat, and I must say, I have to toot my own horn!!!! Delish!!!!!! I also cooked black eyed peas on the side. I'm not really a fan, because of the taste, but I sauteed oinion, and garlic with DD sausage, then cooked them in a chicken broth, and sprinkled Tony Chachere's in it! Talk about flavorful!!! Thank's for the instructions! I really enjoyed it!
Doing this next week, on Monday. I did your Red Beans and Rice and cornbread and it was delicious. I having problems getting hold of the pickle meat, I may have to start pickling my own. I found this recipe Charlie, let me know if you have ever pickled meat. Pickled Pork Recipe Ingredients: 1 quart distilled white vinegar 1/2 cup mustard seed 1 tablespoon celery seed 2 tablespoons Louisiana-style hot sauce, such as Tabasco 1 bay leaf 6 cloves garlic, peeled and smashed 1 tablespoon kosher salt 12 whole black peppercorns 2 pounds boneless pork butt, or rib tips cut into 2-inch cubes Directions: Combine everything except the pork in a non-reactive saucepan. Bring to a full boil and retain at the boil for 3 minutes. Cool the brine and add it to a stainless steel, glass, or plastic container. Add the pork, stir thoroughly, and push the meat down to fully submerge it in the brine. Cover and refrigerate for at least three days before using as a seasoning meat. Drain, rinse, and drain the meat again before use to remove all traces of seasoning aromatics.

oooh Charlie I made these greens the way you demonstrated, OMG! I have to call the repair people cause I broke my table!😄 The cornbread didn't come out right though I don't know what happened but I'm gonna try again. But the rice and the greens and I added some Black Eyeded Peas It was sooo delicious...
