    The top of your galette is not cooked. You need to flip it, cook the other side before adding in the ingredients. Putting the lid does nothing to cook the top of your galette.

      She put the lid on to poach the egg, not to cook the calette. But yes, you need to flip the galette before adding the egg....

    Real French crepes contain only buckwheat, water and salt

      Only the ones from Brittany. There are plenty of other French crepes receipes... You won't do crepes suzettes with that, for instance.

      I seen in original french recipes that many dont use eggs or any substitute. Look up Galettes Bretonnes

    Buckwheat flour has less gluten than white flour. It’s not gluten free.
