I'm 99% your Denim is genuine levi's. Just look to stitching quality, it seems to be great.

Levi's Button Fly 501 in Dark Wash for $5 !? That's a steal I'd never wash'em to keep the non faded color

It looks legit, but I've seen fake Shrink-To-Fits.
You can tell by the care tags inside, the metal buttons, and the details at the back of the rivets (check for the concentric ridges).

Your 501's look legit. Selvage denim is defined by the older style looms that were prevalent in American mills up until the mid-20th century. They garner a higher price because of the relative rarity and are mostly made in Japan now. With that said, the Levi's 501 STF are iconic, but not Selvage. They have varied a bit over the years in design and weight of the fabric. They will absolutely shrink with washing, especially the first wash. My most recent pair lost about 1" in the waist and about 2.5" in length with a tub wash in warm water and hang dry. They then stretched out again in the waist and thigh with wearing. I've since washed them a few times in the washer with cold water and hang dry. They haven't shrunk any further in the waist, but have last about another inch in length. Originally 32x35. After 9 months and 4 washings, now at 31x32. Yours are a bargain at $5!!! Score!

This is original LEVI'S 501 SSHRINK TO FIT, but not selvedge. And of course it's not vintage selvedge.

For $5, it really doesn’t matter.
For your comments, for selvedge, turn your jeans inside out, you will see the distinct coloured edges.
For shrink to fit, it will say on the card stock that say. But in case yours does not come with it, you will find out when you washed them. To me, it is not.
For originality, look at your back of your button, there will be numbers engraved on them that correspond to the care tags.
You will see more stuff inside then outside of the jeans to tell if they are legit pair
