Believe this when I tell you a Chef on an Ocean going vessel knows his craft! Chef Mike this dish looks outstanding! Just a side note good quality Halibut can be found at many of the better supermarkets. This is not a fish you want to screw up, by not cooking it properly! Slow and easy that's the way to do it, slow and easy. Buy fresh ,Eat fresh ,Be fresh!
I love the fact that, at the introduction of Chef Mike, Skippy peanut butter is visible in the cupboard in the background. That said, I am going to try these techniques.
In response to the negative comment below..That is not smoke it is boiling water on the stove. This recipe is fantastic. I am a big rosemary fan. The salsa is a fabulous fresh touch!
Tried this tonight - GREAT - I went a little longer after searing took pan to 600 Degree Grill and then flipped. Turned out very moist, perfection - Love the Topping as well, went with herb medley rice, and broccoli with fresh garlic. To the flour I added a cilantro/onion/garlic powder mix, and onion powder with dried chive, and crushed fresh rosemary. - VERY VERY GOOD.

First time I see a cook/chef using canola oil versus "extra virgin olive oil". I've always questioned people using evoo ON EVERYTHING, FOR EVERYTHING!! Different oils for different applications is best, no one oil can do all jobs but, evoo sounds cool I guess ;-)
