Hi do you have to marinate your goat over night or can I just season and cook it the same day? Also do you have to have the scallions? I'm completely out. I want to cook this recipe today
Gina Ford Hey! The good part about this seasoning is that it immediately marinates the meat so it does not have to sit for hours! Your food will taste like it’s been marinating for days ...and yes you can exclude the scallions you can add and take off any ingredients you want. Thanks for watching 🤗
You are a life saver. Question. Can I use the roast pan to bake the oxtail and curry chicken in it? I like this method more than the traditional method. Don't feel like standing all day when I have other things to take care of. I definitely will try this method.
TheConsciousBlackMan King Aww thanks so much for watching!! Yes defiantly u can us the roast pan for the oxtail I actually have a video on my channel for oxtail using the same method. Now for the curry chicken I would recommend using a Dutch pot and cooking it on the stove because chicken doesn’t take too long to cook and you wouldn’t want it to burn! Bless up
I have had the goat marinated for overnight. Though I had the goat washed with just water and not with lime or vinegar as suggested. What implications will this have?
Yoni thank for watching appreciate your support..the reason why i wash my meat with vinegar and lime it clean your meat and take away the rawness from it..but its ok how you choose to do it..when i season my meat with my blended seasoning i cook it right away because while cooking the seasoning marinated into the meat so I get more flavor from it

Everything is pretty much eyeballed ( no measurements) because some may love a lot of spice a lot of garlic etc so I would suggest to watch my video “Best Way To Season Meat” I show all the ingredients used and feel free to adjust it to your liking and make the amount you feel will last for at least 2-4 weeks in your household. She didn't need to add the oil since the fat from the goat make its own oil. Nonetheless, with the exception of the oil, I make my goat the same way and it is delicious!

Can you please please tell me how to make your blended seasoning?! How many onions, scotch Bonet, cloves of garlic etc to make an amount for one “pot” etc?! It’s such a wonderful innovative idea!
Tene Ten, that seasoning is something that Caribbean peoples do, it's not innovative for us. In some Islands they use more of the green herbs than others and the consistency may vary. In Barbados our mixture is not as loose as some of the others, I think it's because if we are doing a whole chicken, a piece of pork leg, shoulder, lamb leg or fish, we'll put slits in the meat and put some of the mixture into the slits. Where as other people tend to put it on the outside only, we put it both inside and outside. I also find that we use a bit more onion in ours. The people of Spanish decent like Puerto Ricans put sweet pepper in theirs while we use hot pepper. Slight changes but all taste good.

The most intrested part in Jameican food culture is no food cubes to extra taste. All r natural herbs . But in African recipe all add that cube this cube to taste. I wonder why they don't know the consequences of those artificial food cubes. Use all natural herbs live healthy people.
Exactly! like the green seasoning. Green seasonings differ from person to person. You can either make it yourself or you can buy it, I'd rather make it.
You can buy it at your local grocery store it’s just a mixture of seasonings in one ...i prefer to use this than plain salt but your free to use something else.

Bonita Weekes I put slits in my meat too, but I also create a combined seasoning mixture that can go anywhere on or in the meat.

Duffus Sheila when u buy it cut up like hers. U just trim out the majority of the fat and wash with vinegar and lime juice. U can use flour if u want.
