You HAVE To Try This Sausage Tray Bake!....

- Tray bakes are one of the easiest things to throw together, especially if you are busy. Lob a load of veggies, sausages and seasonings into a pan, bang it in the oven for half an hour job done! This sausage tray bake uses one of my favourite types of sausage, the Italian. They are great for a number of reasons, but mainly because they have a lot of flavour in them already, so you don't have to go out and buy a bunch of ingredients separately. They have a really meaty texture too, which goes well in contrast to the soft sweet roasted veggies. Trust when I say, you will love this!

To make my Italian sausage tray bake you will need:
Feed at least 4
For the tray bake
►12 Italian style sausages (Currently 2 packs for £6 at M&S)
►1 red pepper
►1 green pepper
►Around 300g of cherry tomatoes
►2 medium red onions
►1 large courgette or 2 small
►About 8 leaves of fresh basil
►1+1/2 tsp of chilli flakes (or to taste)
►Salt
►Pepper
►A little oil for cooking
For the garlic bread
►2 small baguettes
►250g of soft unsalted butter
►4 garlic cloves
►A good handful of fresh parsley
►Salt & pepper

What's your favourite thing to make with sausages?
Sausages with onion gravy and mash. Especially when I make the gravy in the pan with the sausages and onion and the mash makes it champion 🏆. Eat the plate
Oh my, um … Italian sausages sauté with onions first then rainbow peppers and garlic and my spices of choice, I like usually a bit on the hot side, then served with basmati rice with a little salad on the side to balance and also can bring the heat down. Dinner for one, usually, so it’s always a learned ng curve to experiment with ingredients and the dish. 😊
I also made a spiced Italian, dollar sliced and seared first, stir fry the week before last that was also so delicious!
I live on my own so I can't normally justify a Sunday roast. But I can buy a pack of premium sausages, cook those with onions, serve with potatoes, veg, Yorkshires and gravy
@@shirleyfrederickson4794 I've got a recipe on here called fennel sausages with lemon potatoes. It's amazing with Italian sausages and well worth a try if you haven't already. X
I sometimes take them out of the skins and fry them up like mince. When they're nearly done I add chopped leak, saute till soft, then add a load of beaten eggs, cover and simmer until the eggs start to harden. Load of grated mozzarella over the top then another couple of minutes covered. Makes a huge omelette and is delicious. I cut slices like a pizza, put what I don't eat in the fridge. You can come in and grab a slice cold and it's still delicious. I came up with this when I was on the keto diet. Was trying to keep carbs to a minimum but I still make it now, especially when I've too many eggs.

I forgot to mention in the video. But that bowl of garlic bread has a platform of scrunched up tin foil underneath it. Basically to make it appear there's more in the bowl, for the thumbnail and b roll because I only made up 1 baguette, when in reality you'd make 2. That's the reality of RUclips and the lengths I go to sometimes is psychotic 🤣

Top tip if your butter is too hard for a recipe, just grate it on a cheese grater.

For me it’s simple as I’m a plain old working class. It’s a sausage pasta bake of some sort, good old bangers and mash or my favourite childhood dinner, chips sausages and beans. But I don’t really have that, that often.
I'm as plain as they come haha. Some of my family think I eat like Gordon Ramsay every day. And although I love good food, I'm equally as happy with a plate of chips, beans and a fried egg.
Just found your channel Adam, cracking, no nonsense home cooking without pretentiousness and divered with humour. Great content. Binge watched lots of your content and came across your "truth" video. Have you tried Burford brown eggs? They are pricey but my god they are amazing and fab in a scotch egg

My local M&S often has their sausages on a multi buy offer. That is where a freezer starts to earn its keep.
I remember once asking for some sausage meat in a butchers to be told that they didn't have any.
The owner overheard, asked the lad what was in front of him, he said sausages, but he wanted sausagemeat - the butcher asked me how much I wanted, promptly sliced open the sausages and asked the lad - well what do you think that sausages are made from!
Admittedly an expensive treat for a special occasion, but I love beef braised in port with sausagemeat, breadcrumb, and parsley 'dumplings'.
But when you consider the cost of Big Mac meals at £4 per person, it isnt that bad!

When I get home I’m going to try that using the Italian sausages I can get here.
Top tip for softening butter - heat a cup in the microwave for 1 min place over butter and it will soften in about 30 secs or so. If you don’t have a microwave boil a kettle, fill cup halfway with freshly boiled water till cup is hot and again place over your butter portion! Simples 😊

I'm not a fan of parsley. I use oregano, rosemary and a wee bit of thyme in extra virgin olive oil and spread that on to the bread. It's yummy.

So much better than shop bought. Also, if it's just say 2 of you and you only want 1 baguette you can freeze the other one. Or wrap the remaining butter in cling film and pop in the fridge. it goes great on top of a steak, chicken, fish or add to roast veggies.

I’ve just found your channel and I love your recipes. At first I thought these will be good when we’re away camping now I’m thinking I’m going to make these recipes all the time 😃. In NE England where I live we have a dish called panackelty and my mother made it regularly when we were growing up. It’s just potatoes, corned beef, onion and water and it’s so easy. You just thinly slice the potatoes and chop the corned beef and onion and you don’t need much corned beef. I told a lady recently that I used a tin of corned beef in my panak and she nearly had a heart attack, she said that was far too much and a waste! So not much corned beef. Anyway then you do a layer of potatoes and sprinkle with the onion and corned beef, then repeat and end with a layer of potatoes. Pour over water and cover and cook, remove the lid or foil for the last 30 minutes to brown the top. Cooking times differ, I do an hour at 180 fan then remove the foil and brown but lots of people cook it for a long time on a very low heat, it’s one of those recipes where people just have their own family recipe. Some people put sausage and bacon in it but I like it very plain. It great on it’s own or you can have it with veg or baked beans. There’s recipes online so take a look. Mate a wee tip I have for you with sausages is put them into boiling water for about 3 or 4 minutes the night or morning before and that will plump them up and keep all the flavor in them

More garlic and butter, Adam! I reckoned it was OK if guests used to wash their clothes afterwards 'cos it was so soggy. But that sausage bake...mercifully, I've a decent, traditional butcher within my zimmer-frame's range, so this is tomorrow's grub!
PS, I read about par-boiling sausages first before the 'real deal' in the tray. Haven't tried it yet - have you?

Yep, exactly Jim. You could easily swap out the protein for mushrooms to make it veggie. Swap the sausages for chicken thighs, different veg. Really versatile dish

My mother makes something like this only it’s with sausage, potatoes, peppers, and onions, and sometimes chicken. Who does not love garlic bread, the stuff they sell in the store is never as good as when you make it yourself.

Swap the sausages out for chicken thighs and it will be just as good. I'd brown the the skin first, and make sure nothing touches the skin as you bake, as the moist veggies will soften the skin.

I'm not sure how this internet youtube thingy works but I saw on one of your posts that you were using a Joyoung airfryer so I bought one as it was cheap but whatever the black coating on the inside of the pan is not proper nonstick and is coming off into my food.
Nobody has died yet but I suggest that you stop promoting it.

I've noticed the same thing myself! Was fine for ages, then it all came off the bottom. I won't be using them again that's for sure. Thanks for the heads up, I'll probably hide the video now. It was good in the beginning, shame the quality isn't great.

Errr..... Mr. Garratt; why don't you suggest to people that if they're using the oven (esp. onna budget), that there's lots of (UNUSED) space in the oven than can be used to cook?
OH!!! Never be afraid of using dried herbs/spices until you've tried them.

Lidl mate. Plenty of peppers, but tomatoes weren't exactly bountiful. Crazy state of affairs isn't it. At this rate I'll be showing you all how to make water soup and thin air sandwiches
