I'm an American from NYC who has been teaching English overseas for 7 years (Turkey, Ukraine, Czech Republic). For the past 7 years, every semester cycle I use this particular episode to teach Cooking Grammar and Vocabulary. The pace is slow, the recipe is simple, and your voice and pronunciation is clear and easy to follow. Afterwards, my entire class is usually starving and several students invite me out to a group lunch or dinner!!
I'm sorry Trigger, but , these ARE NOT true chicken tacos, "Their a Gringo-nized version of chicken tacos" - And if you like them like that, then more power to you, I guess....
I'll stick with making my Chicken Taco's with Ground Chicken, and traditional ingredients as toppings. What she made is a Poached Chicken Salad, with the option to be a Salad Wrap since it's on a Tortilla. And Vinegar mixed in Taco Veggies?! Seriously?! Just, no.

With a career? It's almost impossible. My mom would cook three meals a day for 7 people every day. The prepping alone is a lot of work already. Since I was the eldest daughter, I helped her in the kitchen. Thinking about it now, I feel so lucky to be provided with those delicious meals every day and also learn how to cook.
I have a friend who interned for her. 1. After doing it for so long she can do it by eye and 2. Most of the ingredients already measured out are done by interns before she gets on the set to make the recipe.
I love your recipes Martha and your books. But this one. You spoke at the beginning from an easy recipe for a family. But for a family with 3Kids it's expensive. you can get the cheese in a gourmet store? No family with normal income with kids can afford to buy in a gourmet store!
You would be SO surprised how great radishes can go with it. I made a white chicken chili one time and topped it with radish slices as one of the garnishes because that is what the recipe called for. I was skeptical and now I never make it without the radish garnish!!! Everyone that has it is skeptical and then RAVES about it! It just adds a nice fresh crunch and of course a different bit of a punch because they have that different type of "spicy".
Have you never eaten at a taquería in the US or Mexico? Raddishes are always on the table. It's traditional but who actually eats them? Idk they're so nasty.

Well...to be honest...I'm eating some veggies now that I NEVER thought I would eat 20 years ago (eggplant, zucchini, turnips, brussels sprouts) because, you know, there're good you. Now I actually eat radishes....meh...taste is not wonderful but its high in antioxidants. Eat your radishes and don't complain!! ha ha ha

Ummmm.....Martha, dear. These are not tacos. Just because you put some chicken on a tortilla doesn't make it tacos. You didn't use not one single chili pepper. You didn't put any salt in the pot so that chicken had to be super bland. And I've never heard of radishes on a taco. Yuck! And as others stated, it's queso (Kay-so) not quiso (Kee-so).
When you cook chicken the way she did, it stays very tender and shreddable and will have color like that no matter how long you cook it. It's like poaching. It can keep a pink-ish color sometimes but will be done.
From my experience, when you boil a bone-in, skin-on chicken, it remains pinker than boneless, skinless chicken-what most people are used to cooking--but it's still done and very tender.
I can never understand why people eat the broth created from coking a chicken when you can actually see blood bleeding into the water as it cooks. And the result of that is identified as chicken broth. WTF.
It's not necessarily a traditional "taco" but it has all traditional Mexican ingredients that you would use in a simple meal. Lol do you realize people in Mexico eat meatball tacos among other types of "tacos?" This is a good recipe.

Generally, I like Martha Stewart's ideas but I have never seen radishes in a taco or in any Mexican food for that matter.
Radishes are ALWAYS included at taco stands in Mexico...right next to chopped onion, cilantro and limón. It's a cheap filler condiment.
