You have true class in the way you interview your subjects in that you allow them to talk uninterrupted and stay out of their way. Not even talk show hosts have that kind of class and style!

Having worked on several Warships both big and small it's interesting to see how many of the aspects of how your galley operates is very similar to how a small patrol boats galley works, the rich and famous being the Captain and his Officers. very interesting video.
Being married to a man involved in the supply side of food, I totally loved this video! He will be in multiple establishments in a day; a Mom & Pop establishment with simple home-cooking, a beach bar, fried seafood establishments, and fine-dining restaurants. Not all chefs like non-essential people (much less cameras!) in their kitchens, so thank you for letting us have a peek!
It's all the timings a chef has going on in his mind, one stupid question can throw the thought train and the meal is ruined. I've had that's done to me so often and I'm no chef let alone a cook, if it turns out OK that's a huge bonus if it doesn't the dogs happy.
You are an amazing Captain surrounded by an amazing crew. James is an incredible chef and cooking on a yacht with limited space is certainly not easy especially when you have "very demanding" clients. Many of them have no clue what good food taste like! Cheers to all on AWOL!

My apologies captain, I feel behind on your videos this past week. We are in our busy season with wedding, banquets and some other small functions I've been trying to play catch-up for the past 3 days but by the time I've gotten home I've been wiped out. I'd like to congratulate Chef James, that is such an honor to win and especially that knife. it's a pleasure to see him actually using it where as most people would put them up in their trophy case. Chef James it was a pleasure and an honor to watch you work your magic in such a small environment. it's hard enough to do what you do in a commercial kitchen but to do it in a galley on a superyacht is no easy task especially to put out the caliber and a product that you would want your name on. I can fully relate to Chef James and last minute changes to a menu and all I can say is he's right you just adapt and go with it, it's all about the guest experience and providing them with an experience that they will not forget. Congratulate you Chef James on your ward that's quite an honor and I wish you captain and your crew of AWOL all the best in capturing the best superyacht Charter for 2019. The chef's job may be the most difficult job on the boat. I'm sure some people can be extremely difficult to please, especially when they are paying a very high price for a charter. I like comment Chef James made when he said, "They say they eat everything but they don't." I think we all understood.

Don't k now that I could have done what you do. Great that the relationship between you and the front service is so wonderful. Really helps the overall experience for the guest. Just found your vlogs last week. Really enjoy them. They are real and show the things that I, and I think a lot of other people enjoy watching. Two suggestions, first the when you are talking or interviewing someone, the background music can be bothersome, second try a chest mounted or front clip on go pro in lieu of the head mounted. A person knows when they are going to turn their head and the eyes and brain adjust to reduce the fast jumping effect. Watching the video almost makes one dizzy. Again, really enjoy your videos. Keep up the good work.

Just came across this channel. Fascinating information. I see elsewhere that AWOL spends all it's time around the Mediterranean, so was pleasantly surprised to see the March Madness poster in the galley.
How much actual interaction does the crew have with the guests, outside of serving and caring for them? Do you as the captain eat with them? Can you be invited to do water sports with them? I assume it varies with every charter. Is your interaction different with the owner?
When it comes to being a guest on a yacht and fine dining I would be at the complete mercy of the chef. My fine dining consist of frozen dinners and premade salads from the grocery store. Great video

The most important thing to consider working on a super yacht is while seeing to the needs & wants of the owner and VIP guest's verbal communication kept at an absolute minimum and soundlessly. and the one word never used is no, all of their desired witch's must be catered for in an impeccable fashion.
As a chef for a select group of guests at a time, how do you handle religious requirements such as Kosher or Halal, do you go to your supplier and hope they understand what can or can't be consumed either together (such as milk and meat) or at all (such as shellfish and pork) or do you know or research it before the trip and make orders based on your knowledge? Would you prefer they just say they are pescatarian and not have to worry about the intricacies?
I am pleased the Chef is pulling off egg with the shell. I thought it was just me that had this problem. Anther fascinating vid of what goes on in the background.

If I was aboard the AWOL, I would give the chef full reign on whatever he sees fit. I am not picky, and I've never not respected, or liked a dish I've been served.
You should make a playlist starting with vlog 1. I watched many older videos over the weekend and in order to watch them chronologically you have to start each and every one of them manually.

Katie is a lovely person but lacks people management skills (case in point the sleeping arrangements and new stew saga) and tries to do everything herself. The Deck Crew are awesome. Best Chief Stew for me was Daisy on Below Deck Sail Boat Series 1. Agreed Hannah was terrible.

So that means the menu for each meal is more or less the same one for each guest? Isn't it usual that each guest order what they want at each specific meal from the pre approved menu?
If you're cruising the Med pretty much every port is going to have fantastic fresh food available, and you can get stuff you now know the guests will love.
it depends upon what region they are sailing around and where they are sailing to. an artic cruise would have a lot more food stored or crossing the Atlantic for example

Good video. I think we all had an idea how the guests would be fed. However, how about doing a video on how the crew eat during the time at sea when guests are on board. Do you as captain get an invite to eat with the guests?
A question for Chef Wright: Since you provision at different ports, and you said your provisions are delivered to the dock, how do you ensure the provisions delivered meet your quality standards? The professional chefs I know tend to be very picky about the quality of the foods they prepare...

An excellent episode! You are so natural. The lid of the trash can went up all of a sudden. Very funny. The knife seemed to surprise you. Keep it coming. How does the chief stewardess plan the table, how does she set up, flowers, what variations does she have?
That's a nice galley. But only 2-3 days worth of food? I think if I was speccing a boat, I would invest in some big freezer compartments, but if you are constantly stopping at ports I guess that's not necessary.

If you're cruising the Med pretty much every port is going to have fantastic fresh food available, and you can get stuff you now know the guests will love.
it depends upon what region they are sailing around and where they are sailing to. an artic cruise would have a lot more food stored or crossing the Atlantic for example

A question for Chef Wright: Since you provision at different ports, and you said your provisions are delivered to the dock, how do you ensure the provisions delivered meet your quality standards? The professional chefs I know tend to be very picky about the quality of the foods they prepare...

That's a nice galley. But only 2-3 days worth of food? I think if I was speccing a boat, I would invest in some big freezer compartments, but if you are constantly stopping at ports I guess that's not necessary.
