餃 is dumpling, and in Chinese, the character in front of it is the adjective/qualifier. 水餃 is "water" "dumpling", meaning it is a type of dumpling to be boiled in water, as opposed to steamed dumplings (蒸餃)or pan fried dumplings (煎餃). As you might be able to tell, the characters for steam and pan fry have four dots at the bottom, this is because they are cooking methods and those dots represent fire. Regardless of what type they're supposed to be, you actually could cook any of them using any of the three methods, it just isnt ideal. The wrapping in particular is usually tailored for whatever the cooking method is. For example, steamed soup dumplings xiao long bao has very thin skin, and would easily puncture if you boiled or tried pan frying.
Also interesting to note, the usual Chinese style 水餃 is prepared by boiling in water, but is served dry and usually with soy sauce rather than in a broth/soup, although such variants exist too
I suggest getting triangle/thin cut noodles for a chewier texture! One of the main draws of Ranshu/Lanzhou ramen is the noodle cut options as they usually have a sizable variety, although I think #4 is the thickest kind that isn’t flat

Both my parents are from Lanzhou (or Ranshu in Japanese) and what I wanna say is that we don’t have those big pieces of beef in authentic Lanzhou Beef Noodles and we will definitely not put dumplings in our noodles. Lanzhou people do love dumplings though, it’s just not what we eat with noodles, I think this may be Cantonese creation (think of the famous Wonton Noodles.) Anyway, the spices and soups look authentic and it’s fairy enough for a restaurant in Japan.
For those who don't know, umber 4 looks similar to the kanji for death in Japan, hence why in movies like the grudge for example, the ghost number tends to be nothing but 4s. It's symbolic of death is calling.

In English we usually call any Chinese dumpling in soup wonton.but of course in Chinese wonton are a specific dumpling type with a square wrapper made with egg.
