Lol! I can totally relate. In order for me to wrap my mind around processing our first steer , Charlie, I had to say he was our meat garden and I dis connected for a month or two. We fed him out for a few months on grain and I've never tasted anything like it! Hope to never go back to grocery store beef again!
It's amazing how much better the meat is. We've all gotten used to it and we ran out of ground beef last year and had to buy some from the store.....yuck. We're officially spoiled.

I just started canning ground beef, but I add beef broth to my ground beef to give it a better taste and it tastes wonderful. I have also canned deer burger and it is great to!

Well, we had Sloppy Joes for dinner and I'm pleased with the texture. I have to say that right when I poured it out of the jar, it smelled and looked a little bit like cat food. (total transparency. 😁)We tasted it before we put the sauce in and it did lose a little bit of the beef flavor. (probably because I canned it with water....I'd rather save my homemade beef broth for other projects) The texture was very tender and as we ate our sandwiches we decided we wouldn't be able to tell any difference between canned and fresh. Overall I'm pleased and will probably can ground beef again. It's perfect for bbq, spaghetti sauce with meat, tacos.......

Your husband said something about the texture of canned ground beef and that yours was good...BUT...he was eating traditionally cooked beef, not beef that has been canned. I'm curious, too, as to how it turned out. I've been putting off canning some ground venison and ground beef for that very reason. If I won't eat it because of texture issues, it's a waste of good ground beef...so I, too, am anxiously awaiting the report on what the actual pressure-canned beef tastes like!!!

Yeah, definitely not a good canning set up. Hopefully we will be making some changes in the next year or so.

My altitude is 12 pounds of pressure for 4000 feet above sea level for the pressure canner, varies by altitude
We're around 500 ft above sea level. Yes, it varies depending on altitude.... I might not have mentioned that. Thanks for watching.
