I've got the big canner so I can do a big run of canning in one shot. All American makes one hell of a good piece of equipment that they can be proud of. As far as my deer recipe: I don't pre-cook. I just pack my jars with meat and 1 clove of garlic and some sliced onion. I also use 1 beef bullion cube instead of salt. Works for me.
Hi,just a thought, I run boilers for a Living and I find over many different you tube videos know one seems to know why you bleed steam for 10 minutes, the answer is to remove oxygen. Oxygen under pressure will eat away at the metal. So to remove it we vent the vessel. So we have created an environment that is oxygen deprived. As water in part is oxygen and hydrogen it will always be there, but in low concentrations. Hope this is helpful. Cheers
I'm cleaning up some venison right now . I got a nice buck and got it on video too . The first hunting video I ever saw was down for the count at 12 years old and I haven't stopped hunting since.

I appreciate that this guy follows manufacturer safety guidance.
Best video on how to use a pressure canner I've seen so far. Thank you so much for posting.
