This is awesome. We just did this. Off grid here in the Northwest, how long will this kind of meat last this way? Will it go bad if we don't have air conditioning?
Watched another video of a guy eating canned deer that was canned 18 years ago. He said it was still good. He said as long as the jars are sterilized before you can, and the jar seals good it should stay good.
We store ours in the basement. As Long as you have a good seal it’ll never go bad. We store our jars with the rings off. Do not stack them.
How much water? Do you cover the tops of jars with water?
I only add the meat and salt. No water is added to the jars. The liquid is created during the canning process.
Was that 3/4 of a teaspoon or tablespoon of salt ?
3/4 of a teaspoon of salt in each quart jar of meat.
