  • Baked Breaded Olives
    These baked breaded olives are crispy and crunchy bite-sized treats! This is a simple and easy crowd pleaser to make. It is hard to stop at one! Let me know if you eat it plain or with something…
    Ingredients:
    30 Pitted olives
    Vegan cheese
    ½ cup aquafaba (the liquid that the canned chickpeas sit in)
    ½ cup all purpose flour + ⅓ cup flour set aside for dredging
    1 cup panko bread crumbs
    Vegetable oil to spray or drizzle
    Instructions:
    Line a baking tray with parchment paper. Set oven temperature to 375°F.
    In a separate bowl, mix the aquafaba and ½ cup flour together. Whisk until well combined, smooth and thick. Set aside.
    Cut vegan cheese into small rectangles to fit into the holes in the olives. Set the stuffed olives aside.
    In a separate bowl, place ⅓ cup flour for dredging and set aside.
    In another separate bowl, fill with the panko bread crumbs and set aside.
    Dredge the stuffed olives first in the bowl with flour, next dip fully in the batter and lastly, covering the olives in the panko bread crumbs. Place on the baking tray when done, keeping each breaded olive separate from each other. (Hint: You can use toothpicks or a skewer to hold the olive as you are dredging and dipping.)
    Spray the breaded olives with vegetable oil. (If you do not have an oil spray device, drizzle oil on the breaded olives.)
    Bake the olives for 20-25 minutes until browned.
    Serve and enjoy!
    Suggestion: You can eat the breaded olives as is or serve witch a garlic aioli (½ cup vegan mayo, 1 garlic clove minced, 1 tbsp lemon juice, ¼ tsp salt & ¼ tsp pepper combined together) or serve with ½ cup tomato sauce. You could also make a flavoured vegan cream cheese with garlic and spices and pipe that in before breading, too.
