In musescore you can try right clicking on the staff and select staff/part properties. There you can change the instrument naming. Though this is only for the visual appearance. To render the audio correctly, you still need to put different instruments on different staves

How were you able to add the choir vocals and the musescore audios together so that they were in synch with each other?
When i generate the vocal using Cantamus, i upload the xml file with the exact same tempo as the orchestra in musescore

It took almost 6 months to compose. Then the audio/video took like a week to produce. In fact i am still editing the final score lol
