This Fresh Green Bean Casserole is an updated take on the Green Bean Casserole of my youth, one slathered in Cream of Mushroom Soup, and canned green beans.
We can do better! This version takes fresh green beans and covers them with a homemade creamy mushroom sauce (with three types of mushrooms!) and gets topped with the classic crispy fried onions.
It's a Thanksgiving side dish recipe that can be made in advance the day before and all you have to do is top with the onions and bake while your turkey rests!

FRESH GREEN BEAN CASSEROLE RECIPE
Serves 6-8

INGREDIENTS:
2 lbs (907 g) green bean, washed and trimmed
½ teaspoon (3 g) kosher salt
3 Tbsp (42 g) butter
¾ cup (85 g) shallots, cut into half moons
4 ounces (113g) shiitake mushrooms, sliced thinly
4 ounces (115g) cremini mushrooms, sliced
1 large (85 g) portobello mushroom, sliced and cut in half lengthwise
Salt and pepper to taste
2 Tbsp (30 ml) fresh thyme, chopped
1 Tablespoon (15 ml) Worcestershire Sauce
For the Bechamel Sauce:
4 Tbsp (56 g) butter
¼ cup (34 g) all-purpose flour
4 cups (946 ml) milk
3 garlic cloves, minced
¾ tsp (5 g) salt
Freshly cracked Pepper
¼ cup (17 g) parmesan cheese, freshly grated
Topping:
6 ounces (170 g) French’s fried onions
Method:
Set a large pot to boil. Add salt. Drop the green beans into boiling water for 5-6 minutes. They should be tender but still a bit crisp. Transfer them into a large bowl of icy water. Stir the beans in the ice bath until the beans have cooled. Then drain through a colander, removing any ice cubes that remain.
Transfer the beans to a 9 x 13 casserole, and pat them dry with a clean kitchen towel and set aside.
Meanwhile, heat a large skillet over medium-high flame. Melt the butter. Once it's foamy add the shallots. Cook until fragrant and wilted. Then add the mushrooms. Cook, stirring occasionally, until the mushrooms release their juices. Season with salt and pepper. Add the Worcestershire sauce and the thyme. Transfer the mushroom mixture to the casserole, and spoon them on top of the beans, to cover them.
For the bechamel sauce, add the butter to a large, deep skillet, over medium-high heat. Once melted and foamy, add the flour, and whisk until a loose paste forms. Then slowly whisk in the milk. Allow to come to a low boil, which will take 3-5 minutes. Once boiling, reduce to a simmer until thickened. Then add the salt, pepper and the garlic. Then add the parmesan cheese. Stir until melted and smooth.
Pour the sauce over the beans and mushroom mixture, making sure all areas are covered. Up until this point, the casserole can be made ahead. Cover and refrigerate until ready to serve.
Preheat the oven to 350F (180C). Top the casserole with the crispy onions and bake at 350F (180C) for 25 minutes covered, then bake uncovered for 5 minutes. Serve immediately.

WELL DONE. The blanching, cold bath, etc. makes a big difference. Nothing worse than over-cooked mushy green beans. The sauce is perfection. I don't know why people use the yucky canned soup. The camera work in your videos is always superb.

I made your recipe for Thanksgiving. I couldn't get shitake or cremini mushrooms at my local stores. I used sliced baby bellas (8 oz.) I fried the shallots and mushrooms separate using 1.5 T butter with each. The Worcestershire Sauce in the mushrooms was genius. I know that you talked about vegetable broth in your video but I didn't see it anywhere in the recipe. I made the béchamel sauce but my sauce broke. I'm not sure why, but I used the sauce anyway. I figured the French fried onions would cover the broken sauce. I loved this recipe. I would make it again without the packaged French fried onions. Anything fried since a recent hospital stay really turns my stomach. Since it already has the wonderful shallots, next time I would try a topping of panko crumbs. The freshness of the vegetables were what made this dish a winner for me.

Thanks for this beautiful side! I always make my own with fresh beans, mushrooms, sauce, but mine does have the chicken broth! I'm going to switch and make yours this year, instead.
I smiled when you got to the point where you added the mushrooms/shallots over the green beans and said you thought it looked good as it was. That's my favorite side dish (just a little bit lighter on the mushrooms)! I just put some butter in a ramekin, add sliced almonds and microwave until the butter and almonds lightly brown, then pour them over the top. Fast for a weeknight dinner.

I so agree with you keeping the sides vegetarian! I was a vegetarian for 10+ years and everyone always asked what I ate for thanksgiving - I ate everything besides the Turkey because my mom did the same & all the side were veggie :) Plus it was so delicious!

I will use this recipe because I love your approach to not wanting the mushrooms to take over, but you do want them to be present. I am all for that. And the 3 types used. Good idea, too, to leave the edges showing that it's a green bean casserole.

First off, thanks you for such a wonderful dish. My family doesn’t do green bean casserole and I’ve craved it for years, but something extra this year. 🤭 This recipe makes me so stoked. Can I use storebought mushroom soup as a cream sauce?
This looks so good!! I do have a question. Would it be terrible if I prepped this ( up to the topping) and freeze it until Thanksgiving? Would the freezer ruin it?
Great question you could freeze the mushroom sauce and then defrost in fridge over night then reheat and then cook the green beans fresh and proceed as shown :) I’d be afraid that freezing the green beans would make them too mushy :( hope that helps!

Oh no!! You could use just the shallots instead but increase the quantity to 1 1/2 cups hope you enjoy!
This looks delicious! Thank you for trying to keep your side dishes vegetarian. Just an FYI: Worcestershire sauce is made with anchovies, so using it means the dish isn't strictly vegetarian anymore. You can buy vegan Worcestershire at stores like Whole Foods, or you could sub soy sauce, balsamic vinegar, or a combination of soy sauce and vinegar instead.

Simple recipe. Another idea is that
In the time your turkey rests you can cook the beans top them with a little olive oil or butter, chopped garlic and parsley. Much lighter dish and Thanksgiving is such a heavy meal. Another sauce to cover vegetables is unnecessary.
Do you think that can be made ahead & frozen & cooked on Thanksgiving day?
Unfortunately, I don’t think these would freeze well due to the green beans. They might get all soggy when you reheat them. But you could definitely make them the day ahead.
