the things you called grids, im pretty sure you were talking about ERA panels. ERA panels dont catch explosive armaments, they explode to disrupt the anti-tank weaponry

34:32 Quick question...instead of hitting E to extrude, right clicking to keep it in place and then Alt+S to fatten in, could you just hit Alt+E and Extrude Along Normals?

Could you make a tutorial for a high poly t72?
Just start project with subdivision surface modifier at 3 and add it on all new objects from start and if you know how to control it with loop cut side and other tools this tutorial can be useful to you for making high poly t-72 too. I hope this helps :)
