This looks so delicious, for two reasons. 1. I was raised in Texas where beef brisket is the king of meats, and...2. I now live in a part of the US where we have brutal winters, and a nice, warm bowl of soup is perfect. Thanks!! I will try both versions! Thanks to Claire for her descriptive taste testings. I am learning the Korean language and listening to her helps me learn.
@@kirstenjohnson_ Yes, I've made it multiple times following Aaron's recipe, but also changing it some when needed. I don't always have time to make the broth, so I've gotten store bought broth, placed a roast (sometimes I've used chuck roast) into my slow cooker covered with the broth and let it slow cook the day before I put the soup together. Of all the recipes I've made, Yukgaejang is my favorite.

To be fair, a lot of the stuff here seems to be pretty healthy... I mean look how slim they are.

Slimness has more to do with metabolism and genetics. There is a lot of oil, sugar and carbs (rice, noodles, etc.) in Korean food. True, the veggies and meat are healthy (as long as the meat is lean) and I love cooking this food but I’d have to adjust the ingredients beyond recognition to not go over my daily WW points in just one meal.

I have made this x2 with the brisket for 1h30m version and its is just as easy to prepare as Aaron says and just a delicious as Claire enthuses. Everybody loves it. The house smells fantastic and such beefy yumminess.

I'm going to make this tomorrow (fri) and instead of radish, I'm going to substitute it with potatoes.. looks so yummy... and i love Korean food..... I saw your video last night and was inspired to make some beef noodle soup. I didn't have time to go grocery shopping so I boiled some water, added some leftover fatty beef bulgogi, nong shim noodles and an egg and I am pretty happy with the results. Will try your recipe once I get a chance too. Great video and thanks for the inspiration.

WOW!! It is a recipe looks so good it is very late where I live in the United States right now but I was awake because of thunderstorm so I had to watch this and it made me feel like I want soup!! And I want this soup. I get confused about the chili powder I'm not sure if I have the right thing or not ( I have a few Korean chili powders in the pantry.)
I think Claire is Right you'd have to taste both in a row to know the difference and I think the long cooking soup probably makes your whole house smell wonderful and brisket is not too expensive here but if you only have one person in the house ( like my home), that the second version will be more economical. I'm sure the long cooking beef broth is wonderful but I am also sure the second version is wonderful and delicious.
Here is another thing, how is your house so sparkling White and clean all the time? It's just amazing.

This is my favorite Korean dish outside of Kbbq that I've tried thus far. The Korean restaurant in my town makes this and whenever I'm cold, or sick, or just want something warm and comforting this is my go to. Yum.

yukgaejang is 1 of my most favorite!! i love it with Gosari - it's texture is addictive to me!! these 2 recipes are fantastic! a long time ago i've started using chicken powder instead of dashida, not sure why, i think it gives more flavor!!

But, how close is the flavor to army stew? I noticed that it has so many similarities, and Im planning to use the Beef stock used in army stew (which I planned to use instead of boiling beef).

Hey Aaron and Claire, thanks for another amazing video. Do you think it's OK to use rice noodles? It's pretty much the only other type of noodle I have and I don't like using spaghetti noodles for dishes like this. Also, what do you do with the white radish in the first recipe? Was it added in the end or am I blind? I don't want to waste radish but once it's cooked I don't think I can use it for another simmered dish...
When I go to my friend's Chinese restaurant i ALWAYS go for beef noodle soup. They put some kind of sauce/paste on top, and I'm never sure if it's to mix in or not. It tastes so good.

Just as FYI, gosari (bracken) is called fernbrake in English, and is found pretty much everywhere. Just have to know where to look for it, but it grows wild like a weed in many places, too. Toran dae in English is just the young leafy stems of a taro plant, which is typically naturally found in the warmer climate areas of Asia/SEA (but also in Hawaii). When it comes to mu radish, if I can't get proper mu, daikon radish is a decent substitute. They're similar in flavor and size, and cook nearly the same.
LOVE the recipe, Aaron! I'll have to try making this at home. I love yukgaejang, but the restaurants near me charge WAY too much, and it's just never spicy enough, nor beefy enough, and they never manage a good depth of flavor and richness. I look forward to making this at home.
