I didn’t know how great a difference there was until I tried my first orange blossom honey. OMG! Don’t get me wrong, I love clover and fireweed honey, but orange honey is in a realm of its own. My only regret is the store also had jalapeño blossom honey, and I didn’t try that.

They might tell you different places for each type of food, but that's alright. Just because it's a fancy place doesn't mean you'll try the best in town. Ask the locals first!
I've never had bread pudding. Which is surprising, considering my obsessive, stalker-like adoration of peach cobbler. Light, warm and fluffy biscuits with butter and grape jam are beyond wonderful. Banana pudding with whipped cream and nilla wafers... oh... I gotta lie down now. It's just after 2am and it's not appropriate to eat stuff like that now. But I did make key lime/whipped cream pie for my brother's birthday and there had better be some left. Have y'all had pancakes? Like the kind you get at a diner, waffle house or IHOP? Marvellous stuff. Or peanut butter with pancake syrup? Mix one tablespoon or slightly less of peanut butter (Jiff creamy PB is best) and enough syrup to make the mixture runny, then dip it up with bread. Don't make too much or you'll have more than you can deal with and a mess to clean up to boot. I know some people use honey for the mixture but I didn't care for it. Either way, I call it Hillbilly Fondue. 😊 Pralines are not my thing, because they always have pecans in them, in Texas, and I hate pecans.
I don't put any whipped or meringue on top . . . just vanilla wafer crumb....I use evaporated milk in the pudding - that's my secret! It is SOOO YUMMY!
I think it’s a personal/regional thing. My Mississippi born and raised parents never added a meringue. My sister does now though when she makes hers. 😂

Bananas Fosters over Belgium Waffles is amazing! Not to toot my own horn. But I'm a retired chef and banana Foster's over Belgium waffles was one of my creations and it was a momumental favorite.

When a food contains natural sugar you apply heat to develop those natural sugars into the brown color and nutty flavor of caramel. Typically that results in a firm fruit or vegetable ending up softer. Caramelized onions for instance get brown, taste sweeter, and their consistency is essentially wilted. Caramelized bananas would also soften as the heat breaks down the sugars, almost artificially ripening them. While the sauce was caramel, that is also syrupy not crunchy, it thickens, but doesn't harden when it cools. What you seem to be describing as what you expected a caramelized fruit to be like sounds more like glacé fruit (bananas in this case) which is coating them in a sugar syrup that crystallizes when it cools, giving it a crunchy texture. I think this is just a case of misunderstanding what caramelization means and forming expectations based on that misunderstanding. Nothing wrong with that, mistakes happen, but as someone who has worked in kitchens for decades there I can, again, tell you that the soft consistency is 100% how caramelized bananas should present. If they had been crunchy with the sugar something would been done wrong.
Pralines can be one of several different nuts. But Southern US is almost exclusively Pecans, whereas France is Almonds, or I believe sometimes even Walnuts.

The experience was great! The sauce delicious.... We could see how with more caramelization the Bananas would have been sweet and tasty. Ours just wasn't like that.
For the banana pudding, it's generally not topped with cream but with a meringue that it then baked to give it some color. You can totally make the banana pudding. I don't eat banana pudding but growing up watching my mom make it, I totally know how it's done, lol. Grab a box of Nilla Wafers and the recipe is usually on the label. For the Banana's Foster, I don't think the bananas are supposed to be caramelized. This is the second time I've seen this done and they're definitely not on there long enough to caramelized. I know people definitely eat a scoop of ice cream with their bread pudding. The trick with the honey is to not do too much, lol. You liked that first bite and then you double dipped and that's what got you. A nice thin drizzle is all you need and good quality honey helps.

I use to travel for work and a gent that traveled with us discovered Bread Pudding. He fell in love with it and every city we went to he'd order the Bread Pudding if it was on the menu. There were surprising differences in how it was made he/we discovered since it was so easy to make people began adding to it to make it stand out from other places.
One of my favorite restaurants in LA that, alas, didn’t survive the pandemic used to serve a gingerbread pudding around the holidays. One of the ten best things I’ve ever tasted! I miss it. 😢

There are two types of banana pudding. The one that is cooked with a meringue topping and one served cold with whipped cream. I think both are good. I do hope you got the chance to try peach cobbler with ice cream because that's just heavenly.

FINALLY! Someone eating sweet biscuits 😊. My parents are from the south and we only ate our biscuits with jelly/ jam/ honey or syrup. Eating savory biscuits(w/gravy) is new to me too 😂.
i'm the opposite. grew up with biscuits with country ham and eggs or with gravy, seeing biscuits with icing and sugar and jelly is weird to me. grew up in the south
@@jishani1 It’s funny how things are different from household to household. I feel like people only review them on YT as savory items so it’s refreshing to see them how I grew up with them. Also, I’ve never had them with icing. Biscuits were always a breakfast add on in place of toast(made with butter on the stove top). With savory items like grits, eggs, bacon, sausage or these red sausage links. We didn’t eat country ham(I assume it’s regional). My parents were born and raised in Mississippi and I’m a first generation Northerner. I had the best home cooked meals compared to my friends whose families are from the North. lol it was all Southern Hospitality at home.

Every server at Brennan's makes the Bananas Foster tableside. So, depending on your server and how busy the restaurant is, they each make it slightly different.
It was a great experience and the restaurant was very busy! It's interesting how each server adds their own touch to the Bananas Foster experience! The sauce was delicious but as a preference we would have like the banana's to be a little more caramelized! It was also $28

But there wasn't even Rum sauce on it , so much better that way and Pralines should have Pecans but surprised they didn't get recommended Pecan cake or candy or pie !!

One of the restaurants in Pittsburgh ( which sadly closed its doors) I was the sous chef. The exec and I formulated a recipe for smoked bread pudding with house made single malt ice cream. Friggin Stellar! It sold so well we had to cut back to small batches because of the amount of labor involved. Sorry, I'll probably take that specific recipe to my grave.

I made it past Christmas with leftover donuts, it was pretty good. The rum cake I made was better. There’s a restaurant near me that makes the best white chocolate pecan bread pudding……
Check some cookbooks for a banana pudding recipe. The vanilla pudding should be cooked on the stovetop and not instant! It is topped with merengue, but you can leave it off if you want. Eat it warm, then refrigerate it and eat it cold the next day! It is yummy both ways!

So hard to pick favorite foods, but a good bread pudding is always my go to for favorite dessert. Simple ingredients, simple to make, but just comes together in an amazingly comforting and delicious way. Love it hot and with a nice brandy sauce drizzled over it. Not too sweet. Doesn't make me feel gross after eating it. Just warm spices and that nice mix of easy textures like you mentioned. Edit to add: You did pick a great selection of desserts to try. Glad you enjoyed!

I agree with you about the cream in the banana pudding. I don't know why that seems to have become the popular way to prepare it. Wafers, banana custard, and meringue on top is Banana Pudding.
A warm bread pudding is pure bliss with a little heavy (or double cream) drizzled over it. Vanilla ice cream is also popular but I think it’s gilding the lilly. However I’m old school.
Glad you guys enjoyed the dessert being from the south you should try peach cobbler or lemon meringue pie.both I'm sure you would like I'm not into banana Foster ...and biscuits you see they are made a little different but always soft in the middle you can eat them anyway that makes you happy they will always be delicious....👍
We struggled a little. The couple of popular places were closed on those days and the Banana pudding we did get was more of a fusion dessert. We eventually ran out of time but we are really keen to find some soon!

I just saw your vid on Brennans. I used to bartend there in the 90s. One point is that the post of New Orleans was a big impoter of bananas fromsouth America . Owen wanted to do something to incorporate them. Btw I always thought bananas foster was the worse thing on the menu. The boring chocolate cake there was amazing. I like bananas too but it let me down always. The turtle soup, Jackson said, filet Stanley are all wow and everything else but the fosters.
I have not heard either of you mention Apple Butter on biscuits. It's not butter or sauce but a smooth mashed apple condiment with a spiced taste. Butter a warm biscuit, then spread on the apple butter.. yummy..

Cher amies has some of the best fried oysters for sure. I am from the Westbank of New Orleans. I lived on the Bayou for 17 years up until a couple of years ago. Came back to the city. Sure do miss Cher amies.

I’m going to agree with y’all here. I’m southern and never cared much for bananas foster or pralines. I was also raised with baked banana pudding with a meringue top. Even when I’ve had the refrigerator version, it hasn’t come with just a whipped cream topping. But everyone has their own slant on cooking and baking so you’ll encounter just about any and all culinary styles in your food journey!
Maybe eventually, you'll try other types of desserts. From the Mexican menu, flan is a must, or fried ice cream, or my favorite, tres leches cake. I think blueberry jam with clotted cream on an American biscuit sounds tasty. 😋

It may have been already mentioned, but Pralines are usually pronounced Pray-Leens in the Southern U.S. And like previously mentioned, Pecans are generally used. That being said, we called the pralines with peanuts "Peanut Patties" as a child. They were readily available in the food shops that had a candy section and yes, the crystallized sugar is a textural thing that some do not appreciate. Of course, homemade is best. I am now anticipating the next vlog just so I can find out what food/item Nicola does not like! LOL The list is growing. PS...I prefer buttermilk biscuits myself. I'm from the south too, and we always pronounced it Prah leens. I guess it's like pecans. Depending what part of the south you're from, you either say Pee cans or Pa Khans.
MY favorite part of bread pudding is the corners. I've never had biscuits and jam as a desert it's always been more of a breakfast item. Banana pudding, is easy and simple to make at home for yourself (you can forgo the whipped cream if you don't like it, I'm not a huge fan myself). They have different types of honey, the taste will vary depending on the flowers used, the lighter ones tend to be milder where the darker ones will tend to have a stronger flavor. Other southern deserts, Peach cobbler, Sweat Potato Pie, Pecan Pie (with ice cream), Hummingbird Cake.
I believe praline is always pecan, candied pecan. I always hear bananas Foster and cherries jubilee mentioned together. I think because they’re both fancy desserts.
I had my 1st Bananas Foster at Brennan's ❤ My great grandmother used to make pralines. She never put chocolate in it and only used pecans (that we picked ourselves), never peanuts. Btw, I'm in South Louisiana 😊

Nana pudding , cover the bottom of dish with bills wafers and side of dish , vanilla cook n serve pudding. Or instant , when it’s cooled add a can of condensed milk. Mix it well cover wafers with bananas sliced . Dump the pudding on the bananas and wafers , then cover the top with wafers . I’m with her , don’t put cream on top unless you want it in your serving . Also it’s a big dish with a full can of condensed milk . It’s fast and easy and delicious .
If you haven't tried fresh buttermilk biscuits with apple butter you are surely missing out, and bananas foster french toast is the best breakfast on planet earth! 😁😋

Traditionally, for banana pudding you made a meringue from the leftover egg whites and used that for a topping instead off whipped cream.

For the Banana's Foster, I don't think the bananas are supposed to be caramelized. This is the second time I've seen this done and they're definitely not on there long enough to caramelized. I know people definitely eat a scoop of ice cream with their bread pudding.
The trick with the honey is to not do too much, lol. You liked that first bite and then you double dipped and that's what got you. A nice thin drizzle is all you need and good quality honey helps.

I use to travel for work and a gent that traveled with us discovered Bread Pudding. He fell in love with it and every city we went to he'd order the Bread Pudding if it was on the menu. There were surprising differences in how it was made he/we discovered since it was so easy to make people began adding to it to make it stand out from other places.
We loved it! and would definitely try it again! it's so interesting how there can be subtle differences in how food is made.
One of my favorite restaurants in LA that, alas, didn’t survive the pandemic used to serve a gingerbread pudding around the holidays. One of the ten best things I’ve ever tasted! I miss it. 😢

There are two types of banana pudding. The one that is cooked with a meringue topping and one served cold with whipped cream. I think both are good. I do hope you got the chance to try peach cobbler with ice cream because that's just heavenly.

@@jishani1 It’s funny how things are different from household to household. I feel like people only review them on YT as savory items so it’s refreshing to see them how I grew up with them. Also, I’ve never had them with icing.
Biscuits were always a breakfast add on in place of toast(made with butter on the stove top). With savory items like grits, eggs, bacon, sausage or these red sausage links. We didn’t eat country ham(I assume it’s regional). My parents were born and raised in Mississippi and I’m a first generation Northerner. I had the best home cooked meals compared to my friends whose families are from the North. lol it was all Southern Hospitality at home.

I do like it, but seriously 2 totally different ways to eat it. If I make them for myself, warm with butter and jelly❤
Every server at Brennan's makes the Bananas Foster tableside. So, depending on your server and how busy the restaurant is, they each make it slightly different.
It was a great experience and the restaurant was very busy! It's interesting how each server adds their own touch to the Bananas Foster experience! The sauce was delicious but as a preference we would have like the banana's to be a little more caramelized! It was also $28

I'm also glad that you got some proper honey exposure. It might blow your mind to get some honey butter to put on biscuits and whatnot.
But there wasn't even Rum sauce on it , so much better that way and Pralines should have Pecans but surprised they didn't get recommended Pecan cake or candy or pie !!

Btw, I have never had bananas foster with crisp or crunchy bananas. Maybe somebody does it that way, but I'm unaware. But New Orleans is magical, mystical. It is American with heavy French, Spanish, and African influences. So glad to have seen your video!

One of the restaurants in Pittsburgh ( which sadly closed its doors) I was the sous chef. The exec and I formulated a recipe for smoked bread pudding with house made single malt ice cream. Friggin Stellar! It sold so well we had to cut back to small batches because of the amount of labor involved. Sorry, I'll probably take that specific recipe to my grave.

Bread pudding is made from leftover day old bread. I have made it with leftover over glazed doughnuts before. It was amazing
There’s a place in Biloxi,Ms( Parrains) ,they do a white chocolate bread pudding topped with beignets…omg it’s fabulous!
I made it past Christmas with leftover donuts, it was pretty good. The rum cake I made was better. There’s a restaurant near me that makes the best white chocolate pecan bread pudding……

Check some cookbooks for a banana pudding recipe. The vanilla pudding should be cooked on the stovetop and not instant! It is topped with merengue, but you can leave it off if you want. Eat it warm, then refrigerate it and eat it cold the next day! It is yummy both ways!

So hard to pick favorite foods, but a good bread pudding is always my go to for favorite dessert. Simple ingredients, simple to make, but just comes together in an amazingly comforting and delicious way. Love it hot and with a nice brandy sauce drizzled over it. Not too sweet. Doesn't make me feel gross after eating it. Just warm spices and that nice mix of easy textures like you mentioned.

I agree with you about the cream in the banana pudding. I don't know why that seems to have become the popular way to prepare it. Wafers, banana custard, and meringue on top is Banana Pudding.

A warm bread pudding is pure bliss with a little heavy (or double cream) drizzled over it. Vanilla ice cream is also popular but I think it’s gilding the lilly. However I’m old school.

I just saw your vid on Brennans. I used to bartend there in the 90s. One point is that the post of New Orleans was a big impoter of bananas fromsouth America . Owen wanted to do something to incorporate them. Btw I always thought bananas foster was the worse thing on the menu. The boring chocolate cake there was amazing. I like bananas too but it let me down always. The turtle soup, Jackson said, filet Stanley are all wow and everything else but the fosters.

I have not heard either of you mention Apple Butter on biscuits. It's not butter or sauce but a smooth mashed apple condiment with a spiced taste. Butter a warm biscuit, then spread on the apple butter.. yummy..

I’m going to agree with y’all here. I’m southern and never cared much for bananas foster or pralines. I was also raised with baked banana pudding with a meringue top. Even when I’ve had the refrigerator version, it hasn’t come with just a whipped cream topping. But everyone has their own slant on cooking and baking so you’ll encounter just about any and all culinary styles in your food journey!

Mexican food has a wide variety of items to choose from. As tacos, carne asada which is steak, carniats which is like a Mexican version of pulled pork.
HONEY is one of those things you either like it or hate it. I LOVE IT i put it on toast,bagel,waffle,English muffin,pancakes.

It may have been already mentioned, but Pralines are usually pronounced Pray-Leens in the Southern U.S. And like previously mentioned, Pecans are generally used. That being said, we called the pralines with peanuts "Peanut Patties" as a child. They were readily available in the food shops that had a candy section and yes, the crystallized sugar is a textural thing that some do not appreciate. Of course, homemade is best. I am now anticipating the next vlog just so I can find out what food/item Nicola does not like! LOL The list is growing. PS...I prefer buttermilk biscuits myself. (I also like British style scones) Cheers

MY favorite part of bread pudding is the corners. I've never had biscuits and jam as a desert it's always been more of a breakfast item. Banana pudding, is easy and simple to make at home for yourself (you can forgo the whipped cream if you don't like it, I'm not a huge fan myself). They have different types of honey, the taste will vary depending on the flowers used, the lighter ones tend to be milder where the darker ones will tend to have a stronger flavor. Other southern deserts, Peach cobbler, Sweat Potato Pie, Pecan Pie (with ice cream), Hummingbird Cake.

Nana pudding , cover the bottom of dish with bills wafers and side of dish , vanilla cook n serve pudding. Or instant , when it’s cooled add a can of condensed milk. Mix it well cover wafers with bananas sliced .
Dump the pudding on the bananas and wafers , then cover the top with wafers .
I’m with her , don’t put cream on top unless you want it in your serving .
Also it’s a big dish with a full can of condensed milk . It’s fast and easy and delicious .
