  • We found a couple jars of frozen chicken & turkey broth down in the bottom of our freezer recently. The prefect find, to give freeze drying a try, to see how well it turns out - and by how much does the size actually reduce. We'll start with 1 gallon of broth.     Becky on Acre Homestead freezed her bone broth. Great storage idea. She put the trays in the machine, and pour it in that way.

      I was thinking same thing. I made that mistake doing Bain marie(hot water bath around my cheese cakes. Oofta! Scalding myself twice! I now pull the oven rack half out and pour boiling water in.
      I love my bullion in the cold afternoons in winter. Hot cup and a toast or bagel. Perfect snack for a pick me up.
      But I thinks its because I'd get out of school and my grandma would be making chicken or turkey or even beef stock for soup and we would sit and sip that broth with a slice of buttered toast and maybe a stalk of the cooked celery. Every time I sip broth I think of her and our after school "teas".
      I think freeze dried bullion would taste fantastic.

    My almost 2 year old granddaughter and I were watching this. She loved it and kept saying “oh good” “oh yummy”. It was adorable.

    For those of you without a freeze-dryer, I use a foodsaver bag for my broth that I store in the freezer. It really saves space since it freezes flat, as opposed to in jars. Also, you can really boil that broth down to a concentrated level. I boil my chick broth down to 1 cup, and an entire turkey down to about 3 cups. (It also makes a great gravy base when concentrated down to this level).

    This is one of the things I wish I had a freeze dryer for. It would be great to powder up some of my stock so I can have a concentrated version to use for making flavored rice and pastas. Having homemade bullion would be awesome.

      @@growagarden54 premier pump oil needs changed every 20-25 cycles the basic is every 4-5. Best one is oil less pump but that cost alot more.

      Yes it does! I feel bad we left it sit on the shelf for a year. Since it had the original packaging and everything, I felt the need to protect it for some reason ♥ but that's not why you gifted it to us - using it is much more fun

    Its probably better to freeze dry the broth in general since it will take less space and you can make extra concentrated. You can always buy bones from butchers really cheap and run all winter the machine and make a big stock pile. This could also result in fun presents for friends and family. Making your own stalks, broths and spices will be a nice thing to have in storage. Its not just about prepping for some specific event. It will make your life a lot easier, less heavy lifting tones of jars

      If you can try to find the "better than bullion " brand. I normally don't suggest brands but their beef and mushroom and veggie concentrated bullion is one of the best ive ever had. Their chicken is just okay. Not sure why I don't like it tho as hubby likes it. Tgey have quote a few types but not all are available in my area. Oh and walmart in michigan at least, has a better price than meijer(like a whole $1.25 to $1.50 less)
      Ive used 2 tablespoons in about 2 -2 1/2 cups water and a bit of cornstarch for thickening makes a nice quick beef gravy for mashed taters.

    So glad I found this video!! I figured it would work but you did the trial test for me! I may try freezing the broth into ice cube trays prior. Save time in the freeze dryer and I’m a clutz so I’d spill broth everywhere!

    The broth looked like some kind of a science experiment when it was dry. Such great machines. will be getting one as soon as I can fit it into my budget. I'm in Canada so my cost is closer to $4500 - $5000 for a medium. So, it will take some time to squeeze it into the budget. 😃

    I haven’t tried freeze drying broth yet. Lately I’ve been taking all my freeze dried ingredients and turning them into meals in a jar. The Freeze Dried Foodie channel has some delicious recipes where you just add water. I’ve seen people freeze dry the Better Than Bullion jars but I haven’t tried it yet.

    I was on a mission to find one of the pry-a-lids after Rachel talked about in one of your vlogs last year. I finally found one at an antique store! I think i paid $20. It’s best tool!

      Ive been watching too. I'll find one sooner or later. But whole looking I found another swing a way manual can opener for .99cents. My mom gave me a bit of a ribbing about it until I let her use one! They go through cans like butter! I got rid of all my others.
      I still will buy any I find as my son and daughter want one now too.

    Right now I have whole milk in 2 of my trays and 1 tray of evaporated milk. First time for evaporated milk but my whole milk came out really nice. When I reconstituted it, it came out just like when I put it in the FD. I don't pre freeze my liquids, my hands are not that steady. I have done broth in my FD, it is waiting in a half gallon jar making sure it is totally dry. I do that for every thing I FD. Did some elderberries and after sitting on my table for a month sealed I took them out and put them into my dehydrator, to get the small clumps of sticky berries to dry then I will put them into jars for short term use. It is so much fun, I still have some cheese to grate and FD then put into long term storage.

    There is so much you can do. I haven't tried this yet. I will have to, such a space saver. Oh I did make up Rachel's recipe for pumpkin butter. It tasted sooooooo good. I did freeze dry it since you are not supose to can pumpkin puree. It turned out so wonderful. I had a local farmer that had a lot of pumpkin and was closing his vegetable stand so I got a great price and made 3 eight quart crockpots full of pumpkin butter and freeze dryed them I got 1/2 gal of powder plus 4 jam jars to (I gave these away) I also had a pint jar in the fridge of the butter that I used in oatmeal and did make some pumpkin bread with. All fantastic. Thank you for that video as well as this one. Looks like my next project. I also had a bunch of green tomatoes that are turning red and freeze drying and making powder. Love the powders!

    Thanks for doing the test on how much to use. I have freeze dried MANY loads of broth but have not taken time to see how much it takes to make a cup of broth. I have just added it to soups to enrich the broth.

    if you get the gallon size twist tie bags, used to be called bread bags, but you can put this over the lid to the blender, so that no fine powder gets into the lid, and then when you carefully have drawn the bag over the vessel after you blended all the powder up, and turn the blender pitcher upside down and can shake out the powder into the bag. No breathing in of the powder! less mess to clean up on the lid.

    I have been hunting estate sales for ever (one summer😂) my husband told himself if I didn’t find one by end of summer he was getting me one for Christmas. I squeezed like a little kid getting the latest toy when I opened it.

    Such a great idea! The only thing I worry about is the fat. Theres always a little fat in canned broth no matter how many times you strain it. I’m gonna try. Thx for sharing!

    Man that freeze dryer is a cool machine! You guys are doing so much with it. Maybe some day I’ll be able to get one but it won’t be for a long while. Doctors are saying hubby will be out of work for about a year for chemo and stem cell transplant as long as things go well. I definitely have one on my “dream list” though.

    Freeze drying is great. What is your water source to rehydrate? Reliable? We live in town and bottled our dry beans for fear we would not have a reliable water source. Cooked and ready to eat.

      Depending on your jar and lid supplies adding a jar of water to your cannet to fill any odd or short canners spaces can come in handy. The water ends up sterile and if you need a jar later you can always empty.
      I've also reused gently opened lids on my water too. But reusing lids is a personal choice but at least if its just water im only out my time.

      Lots of options for water. We have some stashed. Rain helps. And we have a creek very close - we'd use our Berky Filter to clean it if needed.

    Holy Moses those freeze dryers are expensive!! Definitely not something I could lay out the money for right now. It would be interesting to see what else you could freeze dry though . Maybe in the future it might fit the budget!!

    Morning, Todd. We are getting a Freeze Dryer. But, before we do, we want to have it's home ready. Will I be able to sit the medium dryer on a normal counter in my laundry room? We haven't got it yet, we are waiting on the electrician to come put in a outlet for us. The 70's, they didn't see a need to add any other outlets, other than the one for the washer. So, one step at a time. I appreciate you help.

      It would be as deep as a countertop and would not fit if you had overhead cabinets

    I enjoyed your video, and if you are open to a suggestion, you might want to move your pump farther away from your drier. It generates considerable heat, while the dryer is trying to get cold - so a wide air gap helps save energy.

      Thanks! I do have a small fan I keep near the unit and leave it run blowing into the base of the unit. I turn if off while filming and move it to the side. So you likely never saw it.

    I find it insane that as smart as you all are and as great a job that you do, you use a metal spoon inside a jar. Eventually those little pings and dings cause failure and those jars can break in the canner.

    Tasty styrofoam. Its probably better to reduce it in the future to get more concentrated. The good thing is now you can make tones and even make your own little envelopes for soap and have some at home and some at the cabin.

    My bullion packets say, 1cube to two cups water. Not sure exactly I that would transfer to yours, the cubes are compressed. I would love to have a freeze dryer, but not yet.

    This video gave me a thought. Lays makes different flavored chips in China and an amazing flavor they make is braised pork belly. Would it be possible to freeze dry left over braising liquid (after removing the fat) and make a seasoning from it? Would taste so good on popcorn or other foods.

    Just bought a Pry-A-lid for my daughter and myself for $34 a piece. Crazy to think that when these first came out the cost was probably less than a dollar. To this day, nothing has been invented to improve on the old, now they just charge more for the old.

    I'm curious about freeze drying nuts such as walnuts, almonds... anyone has experience with that? I tried with walnuts but they don't feel much different than what I started with.

      all the new units don't ship with them anymore. harvest right decided they weren't really required. i think some users were getting moisture / mold buildup from them.

    I am confused by how many spoons of dried broth powder you added to an 8oz cup of hot water? It looked like half of the powder? Was salt or lack there of... why you kept adding more?

      Each spoon was only 1/2 full. I bet, salt would have helped the taste I was expecting - with salt, I bet I could have added less powder.

      freeze drying retains about 97% of nutrients in foods. there are some exceptions for things like Vit. C

      Depends on what you pay for electricity. Most people who've calculated say between $1 - $2 per cycle.

      There used to be 3 different ones. But they trimmed it down to 2 now.
      Normal - this was the low end model. the pumps require oil, and you had to change the oil (or filter it) on this unit every 2 batches or so.
      Premiere - this pump requires oil too, but you only have to change / filter every 20-30 batches.
      Oil Free - does not use oil, but a lot more money.

    How are you storing your stuff after it's Freeze dried

      Long term items go into Mylar bags (sealed) for storage, with O2 absorber. Short term things like this broth, just in jars. Snacks, like banana and strawberries just go in zipper bags and we snack on them pretty quick.
