I was in Madrid last week and mistakenly ordered Callos when I wanted to try Caracoles (snails). I didn’t send it back, but dove in (why not?). OMG - it was so wonderful, maybe my best food discovery in Spain! I am definitely making this. I can see this becoming a winter comfort food favorite.
This is one of our favorite Christmas food in the Philippines. But our Callos we only use 1 kind of sausage, chorizo de Bilbao, we also add tomato sauce, bell pepper and garbanzos (chickpeas). Will try your version next time.
My grandmother in Ireland used to cook tripe for me in a stew and I always have fond memories of it. Dublin was very poor in her time and they couldn't waste meat either.

I love most offal but I still find tripe challenging. I've tried this dish a couple of times in Spain but I still haven't managed to finish a whole plateful. Still, good to see how it's done. Love the other recipes so far.
You need a bread and wine to eat callos. Otherwise it's just too heavy a dish. But bread and wine help cut through all the fat and make all together a delicious meal! Can't think of anything better in a cold winter afternoon.
