How To Make Trinbago Cassava Pone | Foodie Nation x Trini Food Designer - Arlene

  • In this week's episode, Arlene recreates her granny's oh-so-special Cassava Pone recipe for us:
    INGREDIENTS
    2 cups Cassava
    ½ cup Pumpkin
    ½ cup Dried Coconut (fresh)
    ½ cup Evaporated Milk
    1 tsp Ginger
    ½ cup Brown Sugar
    2 tsp CGA Marigold Margarine
    ½ tsp Nutmeg (grated)
    ½ tsp Cinnamon Powder
    ½ tsp Baking Powder
    ½ tsp Vanilla Essence
    ½ tsp Black pepper
    A few minced Raisins (optional)
    Pinch of salt
    METHOD
    1. Grate or process finely coconut, pumpkin and cassava - press out liquid if necessary.
    2. Mix sugar and milk until smooth.
    3. Add Marigold, cinnamon, nutmeg and ginger.
    4. Mix in grated/processed mixture.
    5. Pour into a greased 6 inch square baking pan and bake at 350 degrees for 40 mins or until center is cooked or knife comes out clean from center.

    I learned to make cassava pone old school,from my great grandmother.The original recipe had no milk,no blk pepper..blk pepper used to be put in sweet potato pone ,it give the potato a kick.Baking powder,what the reason? Pone don't rise!!.I preder you tell your audience that the recipe is yours.If you think the pone need a little bit more liquid you use a little coconut milk.

      Yes i agree plus you dont't cream mixture to make pone just dump everything in a basin/bowl and mix,mix and then place in dishes and bake. Mummy recipe 57years old and still baking pone that way. No baking powder no oo. Black pepper a must so yea i agree.

    Looks great and lovely colour..never did like black pepper in pone though. My mother used to add sweet potato also. 👌👌

    My grandmother used to make this for us when I was a child. I loved the burnt ends of it. No idea how she was able to make it like that

    This is one of my favourite T&T deserts but I don't think I've ever had it with the black pepper. I can imagine it being a nice touch though so I will try it. Big up Foodie Nation.

      all the recipes have the black pepper...you don't taste it at all...not sure why it's in there...but I refuse to tempt the food gods by removing it lol

    We do not drain the liquid from the ingredients. However, we do not add milk. That's the only difference. And it taste great.
