Recipe
4 Large Eggs
1 1/2 cups suger
1 Tbls vanilla essence
1 cup vegetable oil
3 tsp baking powder
2 1/2 cups flour
1/2 tsp salt
1 cup milk
Instructions
Whisk eggs and suger till creamy, add vanilla essence, cup oil and whisk till combined, add half of the flour, 3 tsp baking powder, half tsp salt, half of cup of milk and whisk till combined, add remaining milk and the other half of the flour (Ps! Don't over mix)
Bake for 20 mins or untill golden brown
Liquid to dip cup cakes
Cup boiling water
3 tbls apricot jam
3 drops pink food coloring
Mix till combine and dip each cup cake in it then into the fine coconut
