  • 雞翼這食材眞是很神奇,上網尋一尋總會找到很多不同的做法,有豐儉沈實的,也有較為浮誇的做法。不論是入屋又或是另你嘩然一番,最重要莫過於找到自己喜歡的口味,就如這款「檸檬煮雞翼」的做法,味道來得恰到好處,片糖跟檸檬互相交融,是從小到大喜歡吃的味道。
    澳洲走地雞翼 8-10 隻
    薑1/2隻, 切片
    京蔥1 條,切段
    日本蔥 1撮,切段
    檸檬 1 個,切片
    片糖,半絛 ,壓碎
    日本豉油,適量
    海鹽,適量
    Australian Free-Range Wings 8-10pcs
    Ginger 1/2 , Sliced
    Peking Leek 1pc, Sectioned
    Japanese Green Onion A handful, Sectioned
    Lemon 1, Sliced
    Brown Slab Sugar 1/2 piece, Smashed
    Japanese Soy Sauce, To taste
    Sea Salt, To taste
    將雞翼瀝乾水,加入適量海鹽醃大約15至20分鐘
    Wipe and dry the chicken wings and add sea salt to marinate for around 15 to 20 minutes
    燒熱炒鍋,加入油將雞翼煎香兩面呈微褐色
    Heat the frying pan and add oil to sear chicken wings till light brown on both sides
    將雞翼盛起代用
    Set aside the chicken wings for later
    用鍋中滾油把薑片爆香,轉細火,加入日本京蔥及日本蔥,再將已盛起的雞翼放上鍋面,加入適量的豉油、片糖及檸檬片,再加少許水,轉中火蓋上蓋子煮10分鐘
    Reheat the oil and saute the ginger until fragrant, then turn to low flame, add leek and green onions. Add the chicken wings on the top, followed by soy sauce, brown sugar, lemon and a few tablespoons of water. Cover the lid and saute for 10 minutes over medium flame until wings are fully cooked.
