I like Tamil Nadu style biriyani.
Why because they cook the meat, masala and rice all together in a vessel. So apparently it's healthy.
In Tamil Nadu we can have the rice with out even the pieces of meat and it's called khuska as a bachelor I prefer that because it contains the goodness and flavors of meat. I didn't see this tradition in kerala

The spicy less salty veg gravy is called dhalcha it is made with brinjal and mutton bones stewed in a dhal base.
It is an Ambur type of preparation which is had along with the Ambur style biriyani.
I thought Dalcha is a Hyderabadi dish, as in Bagara Khaana Dalcha. And I guess, this side dish shown in the video is Vatha kulambu.

Your reviews about these hotels were exactly correct. Noorjehan biryani in Palakkad was famous some 6-7 years back now it is not even a shadow of its former .But people still go there , I don't know why, may be because of parking space or the hotel ambience . Hasis kitchen is really underrated in my point of view.

Try the original Chennai style biryani you l fall in love with it or try in vaniyambadi biryani they use basmati rice with mild spice ! There so many types in tamilnadu style Ambur biryani , thalapakkati dindugal biryani , Chennai style basmati rice biryani ( my favourite 😍 I m from chennai ) and Vaniyambadi biryani ( basmati rice )

In Chennai side, you will get another type in which the rice is smooth as silk. Rice is little lengthier than ambur. And malabar biriyani, I seriously believe you should try from Malabar region to get that original recipe. Heard there is one small place cale Silk or silky near to kannur bus stand. It's a small place and people get parcel. Heard a lot about this place. Appreciate your review on each and everything (security). I am a big fan

Next time you visit Palakkad. Go Hariharputra vilas a veg hotel near Muncipal busstand , try the meals out there , also try some south Indian dishes and sweets over there . They are awesome. It's one of the most visited hotel during lunch hours.

Andhra, Tamilnadu and Kerala. Different variety of biryani to taste. One should taste star biryani in Ambur . But there are local biryani available there which has highest appreciation
Personally, I am partial to Tamil Biryanis. Less masala, less grease etc. But that's subjective of course.
Just wanted to say this. Lots of Tamil restaurants serve biryani on a banana leaf, which is fantastic. (Even Anjappar does this, if memory serves right). Malayalis have this ridiculous idea that banana leaf equals vegetarian food. In my experience, it lends a certain flavour that enhances meats. ഇപ്പൊ വീട്ടിൽ ഇറച്ചി വെക്കുമ്പോഴും ഇലയിലാണ് കഴിക്കാറ്. That's what Tamil restauarants and biryanis taught me.

You are absolutely correct. Biryani means Hyderabadi comes first then comes Tamil Nadu. Kerala cant compete with Tamilnadu or Hyderabad in biryani Matter. We Tamilians having 3 different items which will mesmerize others namely (1)Thalappakkatti Biriayani (2)Ambur Biriayani (3) Chettinadu Biriayani .If you have confusion take best from Kerala and we will also bring our best let we put one judge together .Most people vote for Tamilnadu biryani only
