This is the first 3 star menu I've seen that probably wouldn't leave me hungry after finishing. They provided some decent portions. :) It may have been dessert focused, but to me personally that would have been absolutely perfect.

I would have had the Truffe Bel Humeur, which is a truffle turnover with foie gras sandwiched between two thick slices of truffle served on a bed of truffle sauce. It's only available in the winter months. There's a video showing how it's made, just type l'Ambroisie 2 in the search box. It starts with a truffle courtesan or dealer mulling about the region around Provence looking for truffles and him at a truffle market buying from local residents.
Perhaps L'Ambroisie still deserves them and Bocuse deserved to lose them a long time ago? I'm just assuming based on all the unfavourable reviews of Bocuse over the course of years.
@@cioccolateriaveneziana The thing that came up the most to justify Bocuse being downgraded was mainly the lack of innovation... Yet Ambroisie (and many others) have had the same menu for decades now. My take is Michelin targeted specifically Bocuse because it is much more well-known than Ambroisie. And Michelin's strategy these last few years is all about making big headlines regardless of the quality of their judgement (the most recent example being Guy Savoy downgraded at 2 stars...)
@@BBZehef According to what I've read, Bocuse deserved a downgrade for years, or better yet, he never was a 3 star chef. Pacaud's dishes have the aura of perfection, like classical statues that still fascinate after centuries, without anyone thinking: "This should be more innovative!"

It's not "cutting edge" and doesn't require over the top plating to wow, which I feel are the main reasons quite a few people have lost interest in this place. Can I ask how you got away paying only 330? I wouldn't be surprised if 2 dishes alone cost that...

The Chef du Maison, is a devotee of Escoffier obviously. Some of the accompaniments seemed rather awkward, the crouton with the scallops and the potato roll come to mind. Sauces were of course very french and very heavy. Hard to understand the three star status, when there are so many Master Chefs producing much more exciting and diverse cuisine nearby.
Everything looks scrumptious, but that lamb doesn't look to be top quality, too much fat,had better looking rack of lamb from my local Internet supermarket Ocado for around £15!🤣
