Hi, since I'm from veneto, the Italian region where this cake comes from, I'd like to add a curiosity about pandoro: actually the name comes from "pan de oro" that literally means "golden bread" , this is because, according to the legend, pandoro used to be served on the tables of venetian nobles covered with a thin golden foil, expecialy during Christmas banquets.

To slow down our fast-paced life it is great to prepare delicious Pandoro, especially for holidays. Many thanks to Andrea for the great presentation and the recipe. I had doubts and fear to make my first pandoro for NY 2022. It came out absolutely spectacular, fluffy, and aromatic. I'd like to share my photo in the comments, but there is no option for it. It's a strong kind of flour with protein percentage between 13,5 and 15%. You can use any kind of very strong flour.

I made it this week. Exactly the same recipe but I used a stater I made a few weeks ago from an Ohio evercrisp apple. Spectacular!! Light, airy, fragrant, and delicious. For those of you in the States, I bleached bread flour has sufficient power to make this. 12.7%

Oh my god, after 48 hours my dough is quite liquid, it’s impossible to collect it into a ball .... (((Now I added butter, folded the envelope twice and put it in the refrigerator. Why? I weighed everything, kept the time. I didn’t replace any ingredients either. 😭
