      I was thinking that the Chef would say something less than excellent. His expression was one of not really impressed but didn't want to be insulting. But just looking at it, not enough Soy Sauce or any sauce for my liking, to far on the dry side.

    The crisps most likely has MSG in it. It'd probably be better to blitz it into a powder to use as a seasoning.

      You can't get the full flavour of MSG if you put chips on it. Yes, chips contain MSG but the powder of MSG enhances the flavour.

      @@evansphenomenal even if you add chips on it, you need extra MSG. You can add both Chips and MSG. In most of the chips MSG is sprinkled before frying. So, you're double frying the chips in the fried rice. Also, there's no big deal if you add chips in Egg fried rice but don't add chips in Chicken fried rice. It tastes gross,
      Chicken Fried Rice Recipe (My fav)
      1) Cut chicken in small cubes and then marinate your boneless chicken cubes
      2) Chicken Marination Ingredients: Small Chicken Cubes, Egg, Cornflour, Salt (according to your taste) Mix everything and then deep fry
      4) Chop bean, onion, carrot in small pieces
      3) Chicken Fried Rice Making:
      * Add refined oil for better taste according to your rice quantity and heat your pan
      * In low flame, sprinkle chopped Garlic first and then add Ginger. Fry it until it looks brown.
      * Then add your chopped beans, onion and carrots, fry it and then Add Chicken pieces. Flame High 🔥
      * After frying everything Add Rice and quickly add Salt, Soya Sauce, Little bit tomato ketchup, pepper powder, Ajinomoto (MSG) and Stir it like a pro. Fry for 30 seconds to 1 minute in high flame.
      Add spices if you want
      FINISH!
      INGREDIENTS:
      1/ Boneless Chicken
      2/ Good Quality Rice (Use a rice cooker to make the rice or boil it in a big pot)
      3/ Egg
      4/ Garlic, Ginger
      5/ Beans, Onions, Carrot
      6/ Soya Sauce, Ketchup
      7/ Pepper Powder, MSG
      8/ Refined Oil, Salt
      9/ Corn Flour

    1:11 Alex really put a lot of effort into understanding why people use specific ingredient in dishes. I still remember watching him make mashed potato years ago and the level of detail was extremely high.

    I think the difference is that Alex isnt presenting it as authentic Asian food, unlike Jamie. He presented it as his version of egg fried rice. Im not sure Id want to eat that, but I'd give it a try. BUT, when you can get Uncle Roger to award you the Uncle title WITHOUT using MSG in your egg fried rice, you know you've done something right :)

      If Alex added the chips at the very end before plating, when they are still crisp, a lot of people would love it and chow it down without complaints. That's the only issue I had with this recipe. And there is no traditional recipe for egg fried rice, just traditional ingredients and cooking techniques

    Small note to keep in mind, the potato chip crumbs would supply MSG. Unconventional but not completely insane, there was method to madness.
    Also I loved brussels sprouts. In fact I hate how they get prepared nowadays, I want them made like they were made back in the mid 1990's early 2000's.

    I'm at little bit mystified that a Frenchman grew up with roast chicken and crisps, and I absolutely feel your pain of pairing the ubiquitous parsnip with a roast dinner, James!

      I would say getting roast chicken every week would be unusual, but getting roast chicken from the market like once a month is totally a thing for many people. Low effort for the parents, kids love it. Especially for parents that aren't great cooks, it is a pretty good option and healthier than like fast food.

      Peas, carrot and runner beans in our home. I would have loved parsnip once in a while rather than those runner beans.
      Sometimes mashed carrot and swede was good.

      In Portugal Churrasco chicken comes with crisps (either packaged or fresh made depending on the quality of the Churrasco place). It wouldn't surprise me given the number of Portuguese who moved to France and looking at Alex if there wasn't possibly some influence there.

    As a frenchman I have something to say about the crisps, almost every apéro, which is basically what people do for like an hour or 2 before actually eating the real meal, you drink anything (mostly beer or wine), and eat olives,crisps and maybe salami or chorizo, so I think he meant he ate crisps during the apéro and not during the actual meal, which would make more sense than actually eating crisps during a meal, but he didn't specify so we don't really know

    Been following Alex's endeavors for years, love his dedication. Not sure about this whole
    " best fried rice " trend tho, honestly. I've always considered it a dish that traditionally was made using whatever leftovers you had sitting around, Iron Chef style. Would be cool to see a fried rice competition between chefs, using surprise ingredients chosen at random

      I agree with you on the fried rice, 1isaacmusic. "Using up leftovers," is exactly what this dish was created for. There are no specific rules, and there's a lot of flexibility. People are overthinking this in the extreme.
      That said, when someone like Jamie Oliver comes along -- and f*cks it up so supremely that chili jam ends up on the ingredient list -- I can see why dudes like Uncle Roger jump all over that, and turn it into comedy.

      Asian cuisines have always embraced experimentation and fusion, I don't think the chili jam in Jamie Oliver's recipe was that much of a problem, it just adds some heat and sugar which could work well with something like soy sauce (fried rice with sweet soy sauce is a thing after all) but he did mess up the fried rice by adding water half-way through, and the tofu he just simply crumbled into the dish didn't sound appetizing at all, also didn't seem to have seasoned it at all apart from using the chili jam

      ​@@leparraindufromage366you apparently don't understand who uncle Rodger is. His name is Nigel he's a comedian Uncle Rodger his character. Is joking with Jamie Oliver trying to get a back-and-forth with him. He did the same with Chef Ramsay and they are the best of friends now. I do have a problem when people make Asian Cuisine and claim it to be authentic and then you stuff that's not authentic. Jamie Oliver is the health advocate in England specially with children so his recipes tend to be on the healthier side. But it would be hilarious if he likes slapback at the character of Uncle Rodger and said oh yeah well this is blah blah blah it would be funny. And it would raise awareness for Jamie's cause. I like authentic Asian Cuisine and I prefer it done the way it's supposed to be done. So regardless of anybody having different preferences because of course everybody does authentic is always better to me. You should check out Uncle Rogers it's hilarious he makes fun of everybody as the character of Uncle Rodger. As I said his real name is Nigel and he's Asian comedian who is hilarious one of my favorites. I hope you don't think I was knocking your opinion I think everybody's opinion is valid. But these days so many people take offense at comedians it is killing comedy again I don't mean you. Have a great day checkup Uncle Roger's Channel hilarious! Bear videos where Nigel explains his character of Uncle Rodger. If you do cooking the traditional way in the way he likes him he calls you Uncle but if you don't you're still nephew he does make some off-color jokes and then he'll turn to the camera with a straight face and say sorry children.     Not common to my understanding, but its not unheard for some restaurants' fried rice to have some kind of crispy fried(like deep fried?) rice grains in fried rice.
    I honestly wouldn't hate potato crisps in fried rice in principle, but i do agree with James point that its likely the crisps' texture will either ruined the texture of the fried rice in practice or be ruined itself.
    Maybe other kinds of fried potato bits might work?
    Also, a James and Alex collab would be HYPE!

    Wonderful video James. Has no-one mentioned that crisps (potato chips) are Alex's MSG? That's why he didn't add them at the end. And you are 100% correct that a Michelin star chef would have a MUCH higher standard.

    Hey, French person here ! What Alex calls Roast chicken and crisps would be more akin to a lunch were everyone eats whatever they want from lots of dishes, and it would always include roast chicken, crisps, salad (can be a pasta salad, rice salad, veggie salad, potato salad) and most importantly bread. From my family we would do those meals and there would always be radishes, cherry tomatoes, julienned carrots and cucumber, and some dips like tzatziki or humous ! I'd say the salad and the chicken are the real components of the meal, not really the crisps, but i can see why uncle roger would make a joke out of that situation haha !

    Crisps served with roast chicken (preferable when it have had time to cool to room temp or lower (fridge)) when the chicken is turned into strips is actually a very nice meal; pairs well with some tomatoes (cocktail or wedges), twist of lemon, and optionally a salad. For bread to go with it a humble baguette is highly recommended.
    Also is a great picnic food, or just a way to get rid of leftover chicken from the day before.
    (If doing it as a picnic it is great in that you can pick up everything at a supermarket en-route - so it can be thought of as the fast-food version of roast chicken as well)
    (Used to have it now and then as a kid (in sweden) - was my favorite chicken dish up until I got introduced to east-asian food)

    the potato chips powder wasn't that bad really, if it was in a powder form, it can be treated as a spice or omething like that.... and since many chips contain MSG, he would be adding it indirectly to the dish.
    not the best practice, but still better than chili jam lol

    Potato chips do tend to have msg in them. Plus for a chinese style egg fried rice it is a better choice than any wet ingredient. For a Singapore fried ride, the chilly jam would have been okay, it is already creamy and full of curry and spices that a spoon of jam would barely make a difference in the wetness.

    I highly recommend watching the whole series, especially the last video where he tries to show a way to replicate a method for those that don't have access to a wok. I do that cast iron pan method. It's how I've been doing my fried rice ever since. I have a very large wok that I found in my parent's storage and 1) it doesn't fit on my stove/range and 2) it's round bottom and mine is glass top electric and 3) there's no handle, it is the 2 metal grip style and that makes me nervous about burning myself. I'm currently trying to find a workaround. I have a propane/natural gas burner that we use for deep frying turkeys outside for thanksgiving and I'm planning to try using that if I can get a way to boost the height (currently a bit lower than waist high) or figure out a way to do it on either my charcoal or gas grill.

    I watched Alex's videos more couple years ago and i think he does these cool in depth videos of what really makes the dish a dish. Like, i've been perfecting my dumpling making for the past 5 years now and i finally, after lots of experimentation of different things, managed to nail down the perfect filling. Now i'm on a quest of good dough making. I think these in depth videos give a good insight of where to focus your energy on. Like....if 90% of X dish's flavor comes from the sauce, you don't really need to focus on making 'good' chicken but perfect your sauce. Like bang-for-buck kind of thing. Put effort of where it matters the most and i think Alex really wants to find what matters most in a dish. Once you've figured that out, you can actually be much more efficient in terms of delivering a good dish with the least amount of effort.

    That's a lot of work for making egg fried rice. Seeing his notes while learning its theory looks like he's doing rocket science. I know you said Alex is a perfectionist but still, I think what he did is too much. I commend him though for creating his own wok station, however, its missing the running water. And in fairness, he seasoned his wok perfectly as you can see the color had already darkened. The way he handled the wok while making the fried was also good. He didn't add msg but if you think about it, adding the crushed potato chips is like adding msg to it. In my opinion, Alex's fried rice is not bad but it could have been better. Thanks again for this informative and entertaining reaction video. Hope you reach the 500k milestone soon because I'm excited to see your version of egg fried rice. I'm sure its going to be a good recipe ☺

    You have to watch Alex's series, Chef. For context, he was told by an "expert" that the real spirit of egg fried rice is to use day-old leftovers of whatever one has in their fridge. Also, to use local, seasonal ingredients and to personalize it. But I wouldn't have used potato chips either - maybe some quick-fried bread crumbs as a garnish....

    Potato chips are an American-style snack food; American-style snack foods rely on MSG... Perhaps Alex chose a bag of chips rather than stockpile a single ingredient he rarely uses? Love your channel!

    Looks like he did add MSG after all. Almost all potato chip flavours have MSG in them. Usually, it's listed as Flavour Enhancer 621, 623 or 627 or yeast extract. BTW, Vegemite is yeast extract -- it's basically MSG paste!

    Oh Chef James. The Brussel sprouts and parsnip remark - I felt that childhood pain. But perhaps your father didn't cook the heck out of them like my mom. You can take the mother out of England but you can't take the English cooking out of the mom. ❤

    I worked at a restaurant for a few hours before I quit where the chef was telling me to stick with him and I'll learn Michelin star tricks. One of those "tricks" was dumping cheap crisps from a packet onto a ploughman's lunch :) Classy :)

    1:05 I get it. Uncle Roger is very pragmatic and practical because it just adds fluff. I appreciate it from the wait staff's point of view. It's just like learning to spell and saying "Coq au Vin" properly before actually making it. I obviously got kicked out of the kitchen course so I never learned the latter, hence I can get pedantic about it.

    honestly when uncle roger mention about jamie oilver i was kind of hoping that he were mention it again because i watch uncle roger because oh his entertainment laughter and his reaction makes you want to come back for more , after watching this video i can tell that uncle roger was going easy on Alex , only because that i know that alex is a hard working perfectionist of his unique style

    Thank you chef for this review. About the roasted chicken and crisps, I am not sure how it works in England, but for french families that roast themselves the chicken it goes with roasted potatoes and vegetables. But also on Sundays, day of the market, we easily find lot's of roasted fresh chicken ready to serve and are perfect for a fast family meal, so crisps make sense so we enjoy the morning and afternoon with a fast family meal that isn't "fast food".

    in France (south) where i live, chips are served with game. Pheasant, wild boar jugged hare, wild pigeon etc. Hence they are called game chips. We do of course make them ourselves if we want to remain authentic, but shop bought one's,warmed in the oven are ok 'at a pinch'.

    In many clips of uncle Roger must fancy a Kpop female group name Twice alot, Because he always uses them as a reference to audio up a specific word for his sentence. They've been doin a world tour around US, Australia and around europe this year.. and this March 2024 is in Vegas. Who knows you might even like them and variety of other kpop group like XG. You should check react to them as well and others and see why uncle Roger likes them. 😅

    The chips are an interesting choice as they do add MSG to the dish. I would imagine they function similarly to crispy bonito flake on top of takoyaki in this case

    I am going to be honest here.I think the michelin star chef was very generous with his evaluation. The fried rice didn't look bad but it was mediocre in my opinion. If Alex really wanted to impress he should have done a bit of research and added a suitable, maybe rarely or never used normally in egg fried rice recipes.What I really hated was the potato crisps. He .also added that green onion which was definitely not crispy by the time the dish was fully cooked . That must have been one soggy and wilted dish and a nightmare to eat. He also did not add garlic which might have saved the dish a bit taste wise . I don't think this recipe would have gotten even a score of 3 had the michelin star chef been given the chance to be completely honest

    5:05 I can get fresh herbs here at Masymas. I prefer to just grow thyme, oregano, and basil (it is finicky because my balcony faces the sun. I get it from specialty plant vendors at outdoor markets), but I also learned to forage unlimited rosemary, lavandar, glorious bay leaf (leaves, flowers[!], and fruit), onion grass, mint (careful with that), wood sorrel, and fennel. I can find thyme and anise if I venture into shady hills and local mountains. I made a strange bittering agent from wild artichoke leaves (very potent), and a flour from holm oak acorns. I make tea from several things, like olive leaf (roasted and not), and a surprisingly delicious tea from fig leaf. These things and seasonal fruit get me out hiking ;-)

    I agree with roasted chicken, you serve roasted vegetables because you cook them at the same time. And for me it's mostly a winter dish for cheap meals.

    I thought it was fair for Alex to do *his version* of egg fried rice. Jamie Oliver didn’t make any disclaimer, and he added the chili jam early, where it would burn and necessitate adding water. Alex did what looked like an excellent egg fried rice and added his unusual ingredients at the end. I don’t know if I would like it: store rotisserie chicken can be very greasy. But I’d certainly try it.

    I live in Italy and the "Chinese" MSG I can buy here is actually produced in France. So you can indeed find MSG locally in France.

    My dressing is simple,. 1 ts red wine vinegar, 1 ts champagne vinegar, 2 ts aged balsamic (for sweetness), 3 to 4 ts olive oil and little FRESH ground pepper before tossing. Try it. Adjust for taste or add salt or minced shallots.

    Will say no on potato chips … but … I do add dried Kale snack to my rice while cooking … stirred in after cleaning and with some curry powder before cooking as a rice dish “Indian / Moroccan style “ … is good … Basmati rice and cook a little longer … I use a Korean clay pot … 5 minute 5 minute and done …

    I don't even bother watching Uncle Roger videos anymore, I much prefer watching Chef James review his videos. I, too, am used to living in more of a country area and at the moment, live in a tiny apartment in BUFFALO, NY. I need to move, quickly.

    Potato Chips with rice is really good. I eat them together alot..(not like how Alex did though lol). the just salted or spicy ones are better though. My mom used to add peas and carrots on fried rice. It's actually quiet good.

    Uncle Roger does a tame Asian uncle. Blunt but nicer about it. It's part of why I can laugh. Asians communicate through criticism. Especially if they are one's parents.
    I made egg fried rice yesterday. I don't think that it turned out too well but my sons said it was better than the batches from the past. My oldest was telling his younger brother that fried rice doesn't turn out too well in the cast iron skillet. Later my youngest son said they bought a chicken breast and cut it up and put it into my egg fried rice and it completed it.
    My son said we could terrorize folks with MSG, which made me laugh. I'm afraid that I only do about a quarter teaspoon. I watch supposedly msg sensitive people eat their junk food snacks and they don't realize that they are eating lots of MSG.

    I might be the only one but... I'd love to see Alex make a video on making that outdoor Wok station. I can't really comment on putting the mashed potato chips in the egg fried rice, I'm part Filipino, and we put hot dogs into our version of spaghetti... Sooo, who am I to judge, LOL

    It already has msg from the potato chips. I bet that's the whole point of powderizing it not for the texture but for the flavor. I agree of addinh it for the last part thought to make use it won't be soggy

    I am from a multiracial country and we have so many varieties of fried rice. I myself also able to cook a few types of my favorite fried rice. So if you ask me how do I rate Alex's fried rice? It just an average fried rice. Not more than 5/10.

    I never heard of fish sauce for Chinese egg fried rice, that's more of a Thai ingredient.
