1 bunch of Spinach/Palak
Water for Boiling
2 tbsp Oil
1 tsp Cumin Seeds/Jeera
1-2 Green Chilies
1 Onion finely chopped
2 tsp Ginger Garlic Paste
1/4 tsp Turmeric Powder
1 tsp Coirander Powder
1 tbsp Gram Flour/Besan
1 Tomato Chopped
Salt
1/2 tsp Sugar
2 tsp Fresh Curd/Dahi
1/2 tsp Garam Masala
For Tempering:
2 tsp Ghee/Butter
1/2 tsp Cumin seeds/Jeera
2 tbsp Chopped Garlic
Dried Red Chilies

I think this is THE BEST EVER Palak recipe I have come across and I am an obsessive RUclips browser. Loved your recipe l am going to try that soon. Just one suggestion, you may want to cover the kadhai with a lid while blanching / boiling palak. Leafy vegetables often lose their nutrients while being cooked.
Tried this at home and really loved it. I am vegan, so I replaced the curd with coconut milk instead. It was awesome!

Came across this recipe today as I was looking for a gravy wala palak recipe without dal. I didn't have curd/cream. So I had to prepare without that and yet it turned out so flavourful. We had it with rice :-). Thank you very much for a fantastic & simple recipe :-).
This recipe is excellent! Great side dish and very nutritious. I don’t eat dairy so I omitted curd, flavor and texture still great!

Looks yummy but one question wont the nutrients go while draining the water after cooking in water
I had the same question, what we can do is to boil the spinach with minimum water, the spinach itself will release a lot. We cook the spinach only as long as the liquid evaporates.
Pesticides will go in water, don't use it.
You can use that water to make soup or cook daal
Same question in my mind
