When I began making home made beer I had to go to a library to find out how to make it because computers weren't around at the time. The library had books written by Aussies and that's the way it started over 40 years ago.
I don't use single temperature infusion, or high modified malt, I use the decoction method with under modified, low protein, malt to take advantage of the rich malt.

Hi mateys, at 30 minutes into the mash your pH was abit high, and you done a quick adjustment on the fly.. How does one do this? I'm currently using brewfather , some times i nail my pH, some times it's high, so far i've just been adjusting for my next brew. I've had a quick look to try find an adjustment calculator tool for this and came up empty.
I use phosphoric acid at 85%
