From creating quick (and wrong) pasta dishes last decades, I enjoy creating Italian dishes the right way. Not always perfect, but with enough of your techniques to actually make a difference wrt taste. No more "dead" pasta, better base with actual soffritto (if needed in the recipe), and the family enjoying the improved taste. Thank you for your videos!

The channel seem to be some kind of quick and easy food channel because I saw the word "smarrig" which is slang and means tasty. I must say I doubt it!
I went through Italy 15 years ago I had food from a few regions. I’ve now spent the last 15 years trying to recreate it. As an American we think we can substitute, trust me you can’t.
Not with Prego sauce 😂 I feel ya, my heart and taste buds will always live in Italy. I'm planning my next trip back there for later this year and trying to get my dual citizenship right now. The food there is worlds apart from ours in the states. Our produce just isn't the same. I only get imported pastas, cheeses, flours, deli products, canned tomatoes, etc, so a lot of things I can make and they have that beautiful Italian flavor, but you just can't replicate Italian fresh produce with what we get here. Or the oils and wines. They don't export the good stuff outside the EU, I have to settle with Colavita for now 😂 hopefully you can get back to Italy soon and enjoy the fresh food again my friend 🙏🇮🇹
I made Rigatoni pasta tonight for supper. Vincenzo, it was yellow pasta from Italy, with fresh tomatoes, fresh garlic, fresh basil (added after the meal was cooked), with a side of sauteed peppers and onions with fresh sausage from a local farmer. I am not a Vincenzo level chef, but compared to these people, I am ready for my own restaurant 🤣
A lot of the jarred sauces they use, have a lot of sodium and other fake flavors, so when they combine these "ingredients", they believe it's flavorful, but it's a combination of fake flavors that will never match anything authentic. But when you don't know better, especially people growing up with parents cooking out of boxes, sometimes it's all you know. It's very sad, but an unfortunate reality.
I've made a pasta with tomato sauce and celery. I've mainly used the leaf of the celery and put them with the sauce at the beginning. Thickened the sauce by using some pasta water and reached a nice consistency, a bit runny. Pasta was a bit sour. Next time I'll mainly use celery stalk and a bit of leaf at the end, to color it up. Color me confused! That supposed vegan person is pouring a jar of 'alfredo' (cough cough) sauce into whatever the hell that was in the strainer (again, color me VERY confused on that one). Vegan's don't eat any animal products, including meat, eggs, and dairy. I don't know what she is but it sure ain't a vegan. First she put eggs in that pot of whatever it was supposed to be. Then she dumps in a jar of that gnarly alfredo sauce. I looked up ingredients. It contains, among other things including a handful of additives, cream (from a cow I presume), Parmesan (part skim milk, cultures, salt, and enzymes), romano cheese (again part skim milk, cultures, salt) and a few more chemicals. HOW IS THAT VEGAN?????? Oh wait, it ain't. Of course the sodium level is disturbingly high, and that's just the alfredo! I'm still wondering what was up with using a strainer over a pot.......... Lost in the fog, these people. Totally, utterly lost.

He shows you how to cook five simple pastas the right way along with the science behind the cooking techniques. One of the techniques is a “One Pot Pasta”. It’s a variation of Pasta risottata. He puts white onion, garlic and EVOO in salted water before bringing to the boil. Once boiled he adds the spaghetti and a fresh tomato (chopped). Once the water has evaporated (10 mins roughly), he adds fresh basil and EVOO. As he plates up he tops it with Pecorino.

There are these C tier ravioli in the refrigerated section of supermarket. They come in cheese and meat. They are labled as fresh but dry and horrible. Boiled they become instant regret but if you deep fry them and salt it works as a party snack.
Best line, after adding eggs to this monstrosity, "I'm a vegan, I can't add chicken or beef... it hurts my heart, my literal heart". Vegans don't eat eggs or milk so she's not only a lousy chef, she doesn't understand what the word vegan means.

Hi Vincenzo, i have done some one pot pastas, and they came out incredible. Especially those with a red sauce. I have cooked a slightly watery bolognese, put in the pasta and let it cook until the pasta is ready. The starch makes the dish very “creamy” and the pasta gets the full taste of the sauce. :-)
@@vincenzosplate true true, the sauce was cooked the conventional way including sofritto and 4 hours slow simmer. At the last part instead of cooking the pasta in boiling water, i cooked the pasta directly in the sauce. Came out amazing :-)

It could be funny if they didn't actually waste usable ingredients and food when there's thousands of people who struggle to have something to eat every day. You can do so many different things if you just want to captivate people's attention.
It might be obvious to you, but some people who have no clue how to cook properly end up falling for it. There are plenty of idiots out there that would try to recreate these God-awful recipes.
Making contradictory statements, having an annoying camera person, doing things that don't make any sense (like using a strainer for zero reasons,) doing things wrong, making a horrible mess, using an annoying voice, pretending to be extremely stupid, doing a switcheroo with food that was obviously cooked properly (not seen here,) it's all a performance called "ragebait". All those things I listed, each one generates engagement in the form of angry comments. People can make money from media platforms by having higher engagement. So this "ragebait" formula generates income.
America's Test Kitchen does have that kind of meal, but usually the pasta is added after 2/3 or most of the sauce is built (ex: One-Pot Seafood Fra Diavolo). It feels weird when it's added at the start

Just cook the noodles separately. Sauté the vegetables with the sauce. After boiling the pasta, strain the pasta. It’s optional to save the pasta water but only half a cup.

When I was working with my girlfriend for her pet shop, we occasionally got all the innards of a slaughtered bison to use for animal food. When we had filled stomaches (with the stuff the bison had eaten just before meeting his fate) and ground that up, I had trouble keeping the contents of MY stomach where it should be. Watching these TikToks is worse... I'm so happy that there's no smell-o-vision ... yet. For you, Vincenzo, who are breathing and living the good italian cuisine, it must be oh so very worse to suffer through these videos. I feel with you, man! Just be happy that you know better and can have a nice plate of food to soothe your nerves.

Making pasta is so damn easy. Its mindblowing that people can't even do it. I'm not Italian. I also don't claim I make traditional pasta. I just make pasta dishes I find nice to eat if I need something quick. You can literally make it within 20 or 25 mins with minimal ingredients.
I admit it, I once made a one pot pasta and it turned out delicious. I put spaghetti in a pan with a pinch of salt and just enough water to cover it, kept adding water as needed, then added crushed garlic, extra virgin olive oil and parsley. Think of it as spaghetti aglio e olio all'assassina? Sounds weird but I swear it was the tastiest, creamiest spaghetti aglio e olio I've ever had at 3 am 🤐
Hi Vincenzo, I'm not sure how I feel about the fact that you put this video in my feed. I think the appeal of these videos is how pretty the mise en place looks, but I have a question: If I do want to make a one pot pasta like this, would it work to make a sauce with all the vegetables then cook the pasta in the sauce, adding water to keep the dish sufficiently hydrated.
You're definitely not wrong about this. Many of these users are just making these videos for clicks and for negative attention, and to spread disgust. They're provocative and are intentionally making bad recipes so that the world would lose their shit on them in the comment sections.
What's the harm in boiling a pot of water on the side and cook your pasta in there while your sauce simmers on the side? Then you can add the pasta to your sauce and add any additional pasta water from the pot to make the dish to your desired consistency. Doing it the one pot method things can get too watery or too dry. Then if it's too dry, you add fresh water to the dish, the sauce no longer clings to the pasta. This isn't as tasty. It's like you're rinsing off the pasta and separating from the sauce. When you use the water from the pot that you cooked the pasta in it contains starch that bonds the pasta to the sauce. Hope this makes sense to you!
You _can_ one-pot a pasta. You can make your sauce, add some water and sink the pasta in it and hope for the best. But I find tomato sauces are too acidic and they deteriorate the pasta, making it gummy by the time it's passing al dente. And all the boiling takes the tomatos too far, the sauce loses bright color and fresh flavor and becomes closer to burgundy color and a flavor like jar salsa. Cream sauces are too delicate to boil pasta from firm to al dente. You _can_ one-"pot" in a microwave safe container, in the microwave, using a jar salsa that is full of stabilizers and preservatives, dyes, and too much salt. If this tells you anything, it isn't that much different than using two pots and adding them together at the end, (except that the pasta will probably be chewy unless your microwave can bring the pasta to done within 12 minutes.) But this only makes sense if all you have is a microwave and no access to fresh ingredients. I do this a lot at work. You have to really not care about the outcome that much, and find a jarred pasta sauce you can tolerate. Not recommended.👎

My many Italian-American friends would be even more angry about the lazy and sloppy recipes that You had to review! Hi Vincenzo, i have done some one pot pastas, and they came out incredible. Especially those with a red sauce. I have cooked a slightly watery bolognese, put in the pasta and let it cook until the pasta is ready. The starch makes the dish very “creamy” and the pasta gets the full taste of the sauce. :-)

We can't really call this one a one pot pasta, because you haven't cooked the sauce at the same time and place as the spaghetti
@@vincenzosplate true true, the sauce was cooked the conventional way including sofritto and 4 hours slow simmer. At the last part instead of cooking the pasta in boiling water, i cooked the pasta directly in the sauce. Came out amazing :-)
That first recipe is absolutely disgusting and would not even feed it to my dog! Definitely a trolling video with 2.8M gullible viewers.

It might be obvious to you, but some people who have no clue how to cook properly end up falling for it. There are plenty of idiots out there that would try to recreate these God-awful recipes.

Making contradictory statements, having an annoying camera person, doing things that don't make any sense (like using a strainer for zero reasons,) doing things wrong, making a horrible mess, using an annoying voice, pretending to be extremely stupid, doing a switcheroo with food that was obviously cooked properly (not seen here,) it's all a performance called "ragebait". All those things I listed, each one generates engagement in the form of angry comments. People can make money from media platforms by having higher engagement. So this "ragebait" formula generates income.

America's Test Kitchen does have that kind of meal, but usually the pasta is added after 2/3 or most of the sauce is built (ex: One-Pot Seafood Fra Diavolo). It feels weird when it's added at the start

Sorry but the first pasta with eggs, mayo, can & bottled sauce looked more like vomit than pasta. Very unappetising.
Just cook the noodles separately. Sauté the vegetables with the sauce. After boiling the pasta, strain the pasta. It’s optional to save the pasta water but only half a cup.
Right? No need to overcomplicate things. Italian dishes were always easy and quick to make.

When I was working with my girlfriend for her pet shop, we occasionally got all the innards of a slaughtered bison to use for animal food. When we had filled stomaches (with the stuff the bison had eaten just before meeting his fate) and ground that up, I had trouble keeping the contents of MY stomach where it should be.
Watching these TikToks is worse... I'm so happy that there's no smell-o-vision ... yet.

Making pasta is so damn easy. Its mindblowing that people can't even do it.
I'm not Italian. I also don't claim I make traditional pasta. I just make pasta dishes I find nice to eat if I need something quick. You can literally make it within 20 or 25 mins with minimal ingredients.
I admit it, I once made a one pot pasta and it turned out delicious. I put spaghetti in a pan with a pinch of salt and just enough water to cover it, kept adding water as needed, then added crushed garlic, extra virgin olive oil and parsley. Think of it as spaghetti aglio e olio all'assassina? Sounds weird but I swear it was the tastiest, creamiest spaghetti aglio e olio I've ever had at 3 am 🤐

That's not pasta at all. It is some Asian recipe using pasta instead of noodles. I ve seen asian people living with me doing that kind of thing.

I'm not sure how I feel about the fact that you put this video in my feed.
I think the appeal of these videos is how pretty the mise en place looks, but I have a question:
If I do want to make a one pot pasta like this, would it work to make a sauce with all the vegetables then cook the pasta in the sauce, adding water to keep the dish sufficiently hydrated.
You're definitely not wrong about this. Many of these users are just making these videos for clicks and for negative attention, and to spread disgust. They're provocative and are intentionally making bad recipes so that the world would lose their shit on them in the comment sections.
What's the harm in boiling a pot of water on the side and cook your pasta in there while your sauce simmers on the side? Then you can add the pasta to your sauce and add any additional pasta water from the pot to make the dish to your desired consistency. Doing it the one pot method things can get too watery or too dry. Then if it's too dry, you add fresh water to the dish, the sauce no longer clings to the pasta. This isn't as tasty. It's like you're rinsing off the pasta and separating from the sauce. When you use the water from the pot that you cooked the pasta in it contains starch that bonds the pasta to the sauce. Hope this makes sense to you!
Great that you point out what's really wrong (and offensive) behaviour in regard to beautiful ingredients.

You _can_ one-pot a pasta. You can make your sauce, add some water and sink the pasta in it and hope for the best. But I find tomato sauces are too acidic and they deteriorate the pasta, making it gummy by the time it's passing al dente. And all the boiling takes the tomatos too far, the sauce loses bright color and fresh flavor and becomes closer to burgundy color and a flavor like jar salsa. Cream sauces are too delicate to boil pasta from firm to al dente.
You _can_ one-"pot" in a microwave safe container, in the microwave, using a jar salsa that is full of stabilizers and preservatives, dyes, and too much salt. If this tells you anything, it isn't that much different than using two pots and adding them together at the end, (except that the pasta will probably be chewy unless your microwave can bring the pasta to done within 12 minutes.) But this only makes sense if all you have is a microwave and no access to fresh ingredients. I do this a lot at work. You have to really not care about the outcome that much, and find a jarred pasta sauce you can tolerate. Not recommended.👎
Chef Vincenzo, if My only real issue is using too much garlic in everything, I am a Saint compared to these people! I love a lot of garlic! My many Italian-American friends would be even more angry about the lazy and sloppy recipes that You had to review!
