You are on very thin ice James. Thinner than that crust....It may be good, and Chicago style might be good but those are not pizza. They are something pizza adjacent. Only pizza, is NY/NJ pizza! Even people in Italy have conceded and accepted defeat, and no long call their stuff pizza. Its how they invented the calzone, out of the shame of defeat in the face of the glorious NY pizza. True story. On a serious note lol, I have tried NY style pizza when I was stationed in Oklahoma, and it wasnt the same at all. Later I found out why. You can take the cheese, make the sauce the exact same way and have a brick oven and it wont come out the same. Why? The secret ingredient is the water. Whatever is in the water, makes a difference in the dough, and in turn how it cooks in the oven. I grew up with this, so for me..the other stuff can be tasty but if Im hankering for a pizza, that means only one kind. I dont even call the pizza I made, pizza lol, because I dont have the right oven at home, but the dough comes out nice since I do have the water...the water! Great video!
