  • I love to make chili. I don't make it enough. Cold weather has to be here for me but when it does appear, chili is the first thing I want to cook. This is the simplest, easiest, and best of all, the most delicious chili that I think you will ever have. I don't have a recipe, but if you will follow my directions in this video, you too can make my delicious chili. You can use medium to hot beans, add hot sauce and/or cayenne pepper to yours if you want a hot chili. I swear by the chili-o brand of seasoning. I just love it. If you don't have chili-o available where you live, check out my Amazon store. I hope you will try my chili and let me know what you think.

    Good morning. It’s a very chili one here in Kentucky this morning. A great recipe for this kind of weather. It’s chili, veggie soup,beef stew,chicken and noodles or chicken and dumplings kinda weather. I miss my momma’s chili. She made the best in the world. My sister is pretty close. Momma got to adding stuff as she got older. I said please don’t do that when you’re making it for me. I didn’t want bell peppers or jalapeno peppers in my chili. Momma only used Mexene chili powder, salt and pepper, she used kidney beans… I use only Bush chili beans because my husband doesn’t like kidney beans. We also put spaghetti in ours which is a sin to some people. I think it was about stretching a pot of chili where you didn’t have to use so much meat. Back then a box of spaghetti was 10-15 cents. We’ve used Red Gold tomato sauce for as long as I can remember. I use a can Red Gold tomato juice and still use tomato sauce. Most chili taste good but we always have our preference. You can also put this in a baking dish (left overs) make up some cornbread mix to pour over the top and bake it.. delicious!!

      I like your menu choices! Same in my house! The only thing different is I make all of this and then have to invite people over to help me eat it! I’m a widow now but was from a large family and I always cook way to much! Love to carry meals to my kids or to others!

      @@lindaleathers4696 I’m sorry to hear you’re a widow. My husband and I have been married 50 years. Like you I’d have to give away over half of what I make. I already do that because I love to bake. I just made 8 loaves of amish bread Sunday. I took it to work at my business and put it in the freezer. As my customers come in that I know likes my fruitcake I give them a loaf. This weekend I’ll be making molasses amish bread. I work 6 days a week and bake on Sunday year round. I cook my big meal on Saturday when I get off from work early. It might be chicken and dumplings this weekend. Last weekend it was crack chicken lasagna roll ups. I hope you have a blessed day and I would be that whoever you invite over to eat loves it. 🙏🏻

    Mmmm mmmmm! 😊😋.... this is so similar to how I make my " quick Chili ", I use the Chili beans, as well as dark red Kidney beans. Lots of onion. Chili spices/ seasonings , and I use tomato paste, and 1 can of Mild Rotel . Looks delicious, Miss Karen ! 👏🏻👏🏻
    Yes, topped with lots of fresh shredded cheddar, and a few more chopped onions ! I love to make Cornbread for with it, but I will heat up flour Tortillas, and butter on those, if I don't have cornmeal available. 🙂😊 💕

    Good tip on wiping the tops of the cans. I do that also. You are the only other person I've seen do that. You are right if it's dirty/dusty that goes into your food when you open it.

    This Texas girl loves chili! I don't usually put beans in my chili, but your recipe looks so good, I just have to try it. I use chili meat, a little chunkier than ground beef. I just can't sleep when there's chili in the fridge!

      But you have to let that chili meat slow cook for a few hours, right? Sounds delicious. I'm not a big fan of chopped meat.

      Chili Meat isn’t chopped meat. It’s ground like hamburger only it’s not as ground up like hamburger meat, it’s larger. Chili Meat is made up from the trimmings of Round, Chuck, Loin, Flank, Neck & Shank. Chili Meat does have fat content. This meat is intended to be cooked long, low and slow in a water (or liquid), beans and chili seasoning. If you make chili with hamburger meat you’ll want to use at least an 85% meat with 15% fat! Chili isn’t considered a ‘watch your weight’ meal! It’s delicious, but people all over the USA (maybe the world?) fix Chili different! I’ve heard people say, “Texans don’t eat Chili with beans!!” LOL. I’ve lived in Texas for 59 years and I eat beans in my Chili; unless I’m having Hot Dogs. Then I’ll have my chili without beans! You do you!! Whatever you like, you eat!! I hope this helps!

    We are Texans, love chili too. We put our chili with beans on a bed of rice and add cheese. Onions, and anything else we like. We usually have saltine crackers . Your chili looks so good. Thanks for sharing Karen ! XOXO Mary Ann

    Looks delicious! Sometimes, we put chili over leftover mashed potatoes. I know it sounds weird, but it is delicious. My brother and sister in law told me about that years ago.

      No Christine, it’s not weird, we have potatoes with everything. I love my potatoes, sometimes we have mashed potatoes, baked potatoes and sweet potatoes on the plate (with meat and greens of course) mostly in winter, in summer we have potatoes in their jackets with sour cream and salad and mashed potatoes rolled up in devon. (I don’t know what you call devon in America, it’s a cold processed meat). I think potatoes 🥔 are the most versatile food there is.

      Yes, we love our potatoes too! Our version of devon in the States is called bologna, and it is a very popular lunch meat. In my area, we make fried bologna sandwiches with a fried egg. Very tasty 😋

    You should try chilli chips. Big hit here in our city. French fries and chilli over top like gravy and some shredded cheese on top. It is so good.

    Your chili looks delicious..I make mine the same way except I use Williams Chili Mix in place of the Chili O. Don't you just love the fresh diced onion on top, mmmm that's my favorite topping on the chili. Thanks for sharing your recipe, I know y'all must have enjoyed that meal.     Very interesting recipe! You really can't beat ground chuck for chili. It has the most flavor for ground meat I think. Two ingredients we've never tried are the Bush chili beans and Chili-O seasoning. I can see that they add extra body and flavor to the chili. Sometimes we have chili spaghetti or add brown rice to a heaping bowl of chili. There's never a dull moment when in the kitchen 🤔 Thanks Karen!

    Most people hate the slow cooker mode on the Instant Pot. You're the first person I've ever seen use it. I'm glad you had good results. I like canned diced tomatoes in my chili.

    Hi Karen! Beautiful pot of chili! Now, do you drain or rinse your beans? In our home we love to put macaroni in ours when we reheat it. My mom used to make chili mac alot when I was growing up. Love it! One of my favorite meals besides fried chicken! Also for years I have used a can opener that just lifts the lid off of the can. I couldn't tell if you used one. So nice, no more sharp edges! Love your channel and recipes!

    This sounds so much like my recipe. I have never seen Chili-O, but I use my homemade chili powder with a shake of cloves and cinnamon I also make my own jarred garlic by chopping up one or two heads at a time in my small food processor, then add a tiny amount of olive oil to the jar. It keeps in the refrigerator for months. I buy fresh garlic at the farmers' market in the summer. You can chop garlic the same way and freeze it,

      I love the instapot. So easy. Beans cook in 45-50 minutes instead of 3-4 hours on stove top. Slow cook is divine. ❤️

    Miss Karen, that looks wonderful. I am fascinated with that InstaPot, are they worth having? I usually make my chili with Goya Black Beans, which are delicious, and I've been known to add some corn to it also. I also use McCormick Texas Chili seasoning packet - similar to your Chili-O that you use I suppose, but it's all in one packet. You can try it sometime. Another use for the chili is to stuff green bell peppers with it! When I do that, though I add some rice to bind it. Have a great evening, best regards from rainy, 41F, Connecticut!

    When i make chili ill make chili dogs one night, then ill make a goulash, warm chili. Leave thick, not too thick. Cook elbow macaroni, drain, mix warmed chili in. Use
    13x9 inch glass baking dish. Bake at 350 till warm through. Take out of oven let cool. Spread grated cheese over casserole.

    Hi, Karen. Where do you get the Chili-O in the big container like that? I love to use it for my chili. My Mom always used when it we were growing up. It was the weirdest thing, my brother, Michael would always come by to see my Mom whenever she was making Chili. I told my Mom, he could smell it cooking wherever he was at.

    Australians don’t cook chilli like Americans do we have mince stew and of course with mashed potatoes but the weird thing is whenever I watch an American movie or tv show in winter 🥶 I always crave a bowl of chilli 🌶 and I DONT EVEN LIKE CHILLI. I did actually buy a jar of chilli flakes but haven’t used them yet (probably cause I keep forgetting they’re there). Ya never know Karen, next winter (I hate winter) if I crave a bowl of chilli while I’m watching a movie I know exactly where to find the recipe. Aussies always have mince in the freezer, it’s the only meat I will freeze.

      @@karenstownsend9 yep, I only freeze mince and sausages but I usually know what I’m cooking for the week so I have whatever meat I need get it out, bring it to room temperature and bobs ya uncle. Mind you we only have meat 3-4 times a week. My butchers is only a few streets away and right next door to my fruit and veg shop. I don’t like supermarket meat either. I find the texture of the meat goes funny and I definitely will not thaw it in the microwave same as I won’t cook potatoes in the microwave, given the price of meat nowadays I want to enjoy it. I’m just set it my ways.

      @@karenstownsend9 oooh, that reminds me, I forgot to tell you I only ever use butter 🧈 the real stuff especially in my mashed potatoes. When I first watched one of your videos you said butter makes it better, well straight away I went back to years ago and it was when tv chefs all started becoming the rage and one of them brought out an add for butter and his catch phrase was “ butter makes it better” wow, what a trip down memory lane I had.     I never add water to my chili. I add tomato juice. Why add water when you can add juice or broth?

      Your way is delicious, I'm sure. But this is how I've always made it. I use tomato sauce, chili-o and chili powder. You never know it's water, and there's not enough to water it down. Thank you. ❤️
