  • Happy new year 2018! I have missed you guys so much! I took a little break but I'm back now. And this is our first video of the year!
    My mother taught me how to make this Cameroonian coconut rice. The rice is slowly simmered in freshly extracted coconut milk. It is a complete balanced meal all made in one pot! The crème de la crème of African coconut rice recipes. Hope you enjoy!

    Thank you for this recipe! Suggestion re opening the coconut and removing the meat. Run your coconuts under the spigot to wet them and then put them in the freezer for about 15 min-20 min. Use the butcher knife or a hammer to tap the coconut all around. Often the shell will separate from the meat completely leaving the whole inside intact! You can then make a hole to release the water and cut your coconut however you wish! Also if you still need to manually separate the meat from the shell, I recommend using a butter knife. A slip of a sharp knife can give a serious cut to your hand! Offered with love!

    Thanks for your recipe. I made an inspired version using your recipe and a nigerian version tonight using turkey necks. I share it with my mom and she reminded me (as others have said) in Guyana we do this callaloo(malabar spinach, European spinach or eddo/cocoyam leaf). We call it callaloo cookup. There are other cookup variations like blackeyepeas, splitpeas, or pigeon peas cookup.

      desiree duncan: Hello from 🇬🇩. Coconut rice was one of the last dishes I remember I cooked for my brothers and sisters before I left home after I finished schooling. I got some fish from the fishermen who had only just hauled in a net of jacks, which I added to the rice. It was yummy. I could still taste it.

    Your rice looks perfect! Grainy and cooked. I came here from searching for "Ochro Rice" - a Trinidadian recipe. I am a Trinidadian and this is similar to the Ochro Rice we make. I noticed that you washed your rice thoroughly before you added it to the pot so I guess this accounts for the texture. All the best with your channel and in 2020! 🇹🇹🇹🇹🇹🇹🇹🇹

    In the Pacific Islands we use coconut cream in most of our dishes. U can use coconut shells as charcoal f for cooking using your charcoal stove or u cn use the charcoal for barbecue.. Those good ones cn be cleaned well and used as soup bowl. Or grind the charcoal to powder. U cn mix with water and drink. Its for cancer. Love frm the Pacific Islands, 🇵🇬 to be exact . Coconut palm is our tree of life.From roots to stamp etc. Our special tree here in the Islands

    Make two holes at the top as nature indicates, then put a straw through it and enjoy, or pour out coconut water, then split shell. No mess to clean.

    What kind of cooking is this,I'm confused ,I'm not sure this rice was well cooked,you just added the veggies to the rice which had water ,expected you to cover and allow the water to evaporate so the steam in return will cook the rice,and please aunty kindly wash your onions and ginger after taking peel of thoroughly before blending...Good recipe

      @@Carmensidea Really? The water is inside the meat of the coconut and not on the shell of the coconut. If I'm going to drink the water of the coconut I have to wash my coconut before I break it. When you break the coconut the shell of the coconut makes mess on the meat of the coconut, and the shell of the coconut not clean. I guess I'm too detailed, that's why only few people can cook for me....

    You can heat the coconut in the oven or on top of the stove if you don't have a microwave to remove the shell.
