No matter what I do my dial pad will not light up on 9340cdw. It does work if I choose the fax option.

Your firmware needs to be updated if it’s on the latest update you will need to get it diagnosed at the nearest brother center.
I have a brother MFC-9130CW
I do all the steps and get to the pound, and I can’t get it to flashback up but when it does flashback on, I hit the pound and it just will not let me get to that next screen. Can you help me with this please?

I won't be much help over the comments but I would recommend restarting your printer and trying the steps again. I will try to get my hands on one of these printers and try and make a video explaining it again at a much closer perspective. Thank You for choosing Onyx Tutorials.
how do you know what drum to replace?

Brother designs their color printers to have the drum units all replaced at once. They come as a set together and will just indicate that it needs to be replaced as one.
